I am finishing up this month’s menu this week and then I will have the recipes available through my online classes. I have had a small technical hiccup, but I think it should be worked out soon! Super Bowl Sunday is next weekend and it’s not too soon to buy your avocados LOL! Buy them rock hard and allow them to ripen on the countertop where no one will molest them and cause them to bruise. Once they achieve the desired give, stick them in the fridge until it’s time tomato guacamole! Here’s your dinner planner for the week:
Meatless Monday: Middle eastern vegetable soup with freekeh from my cookbook – this is plenty for my family but if you need something more, you could serve it with avocado toast or a green salad
Tuesday: ginger salmon from kale and chocolate, qunioa with toasted coconut and lime and sesame roasted cauliflower
Wednesday: lemon-thyme chicken, broccoli puree, simple roasted sweet potatoes
Thursday: turkey tacos and green salad with pinto beans, avocado and homemade ranch dressing
Friday: asian noodle salad with seared tofu and stir-fried bok choy
Saturday Lunch: Kale, mushroom and brown rice bake
Super Bowl Sunday: We haven’t figured out our plans yet, but in the past we have done several different easy, buffet options for a small group like:
- turkey and black bean chili,vegetable chili, cornbread, baked potatoes and topping bar, Mexican chopped salad
- meatball subs, homemade pizzas, vegetarian antipasto chopped salad, mini lasagne cupcakes, or I just posted a recipe for Italian 7-layer dip!
- taco bar (ground beef, chicken or barbacoa and fish), refried beans, cilantro-lime slaw, arroz verde
I generally make guacamole and baked tortilla chips, plus jicama cut into thin “chips,” “vegan queso” with chips and baked sweet potato rounds, crudités with hummus. I have also done sliders/mini burgers, mini chicken tostadas, broccoli and cheese potato bites, or warm spinach and artichoke dip, zucchini tots, chipotle brussels sprouts, Mexican cobb salad, shishito peppers, greek pasta salad or sweet potato nachos
Some options from my book are: Greek nachos, loaded baked potato soup, chipotle turkey chili, the perfect baked potato, Green goddess chicken salad, mexcian chopped salad with spicy cilantro dressing, slow cooker chicken tacos, chipotle shrimp tacos, Portobello and poblano tacos with charred corn or wild halibut burgers
Here’s what you can do ahead:
Sunday
Wash/dry greens and herbs
Make chicken or vegetable stock
Cook quinoa
Cook freekeh
Toast coconut, store at room temperature
Cook beans from scratch, if you aren’t buying canned
prep cauliflower
Make taco seasoning
Wednesday
Wash greens
Make ranch dressing
Make rice for rice bake
Wash kale
