Grilled Mexican Corn Off the Cob Recipe

A close second to my obsession with summer tomatoes is my love for fresh locally-grown summer corn.  I think I buy it twice a week from the end of June to October.  I love corn’s juicy, grassy sweetness.  I love how easy it is to make it taste good (if it’s fresh) and how it goes so beautifully with all the other summer produce.  A major bonus is that everyone in my family loves corn.  Actually, not true.  My father grew up on a farm in Italy where they fed the pigs corn and he still associates it with animal feed.  Pity.

Given all the above, I have prepared A LOT of corn for summer dinner guests and I have made an unscientific observation.  Adults are not fond of eating corn-on-the-cob in front of people they are not related to.  Guilty!  I have served both boiled and grilled corn on the cob to guests, as well as sauteed corn kernels or corn off the cob in a salad, and corn cut off the cob is always more popular.  I think that sometimes eating an ear of corn is awkward or messy.  Perhaps it gets stuck in your teeth or stays on your check and no one tells you until dessert is served.  So I have a policy of making corn on the cob for my kids and my husband and me, but always cut off the cob for guests.

One very popular way to eat corn in Southern California is Grilled Mexican Corn on the Cob.  Typically the ear of corn is grilled in the husk and then the kernels (still on the cob) are slathered with mayonnaise, chili powder and/or cayenne pepper, a squeeze of fresh lime and sprinkled with salty, crumbly Cotija cheese.  Utterly delicious, albeit messy and something I would never eat in front of you, especially if I hope to make a good impression and keep my shirt from the dry cleaners.  But I figured the same flavors would translate to to cut corn kernels.  It worked!  The only thing I leave out is the mayonnaise which I think can take over and detract from the corn.  But I’m sure many of you would challenge me on that one.  I am crazy about grilling corn in the husks, though.  Have you ever smelled burning corn husks?  It’s fantastic.  I really think it adds a delicious smokiness to the final dish.

Grilled Mexican Corn Off the Cob

Ingredients
  

  • 4 ears of corn
  • 2 ½ Tablespoons unsalted butter
  • ¾ teaspoon chili powder
  • ¾ teaspoon smoked paprika
  • juice of ½ lime
  • fine grain sea salt to taste
  • Crumbled feta Parmesan or Cotija cheese, if desired (it's just as good without)

Instructions
 

  • Preheat a grill over medium heat. Carefully pull down husks and remove silks. Replace most of the husk and grill for 5-6 minutes per side or until kernels are charred. Don’t worry if the husk burns. Remove husk and cut kernels off of the cob.
  • Melt butter in large sauté pan. Add chili powder, paprika and lime juice and stir to combine. Stir in corn and season with salt. Taste it for seasoning. Try not to eat the whole thing. Finish with lime juice and a sprinkling of cheese, if you like.

Peach and Blueberry Crisp Recipe

Were fruit crisps popular 30 and 40 years ago?  I can’t recall, but I feel like they started turning up everywhere about 20 years ago.  A fruit crisp was one of the first desserts I ever made on my own.  I think the recipe came from one of the Silver Palate cookbooks.  Remember those?  I am very certain it was an apple crisp with the classic oat and sugar crumby topping.  It was such an easy dessert, but so delicious and a total crowd pleaser.  What’s not to love?  It’s the ultimate comfort dessert.  Soft, sweet fruit with a crunchy, nubby topping that you would fight your best friend over.  Did you ever have a crisp warm out of the oven with a little scoop of vanilla ice cream on top?  If you have, then someone loves you!

I’ll tell you the truth, I use the same basic recipe for all my fruit crisps the whole year long.  I’m sure I could put a little more thought into it and start adding liqueur to the fruit or different spices.  I like Giada’s idea of using crumbled amaretti cookies in the crisp topping.  But we already love this the way it is.  Why mess around with deliciousness?

Today I’m bringing you a Peach and Blueberry Crisp because my favorite fruit desserts all start with a peach.  Did you catch my Stone Fruit Crostata last summer?  My husband, kids and I are all obsessed with peaches.  We have a couple of peach trees in the backyard that produce a whole lot of great peaches for two weeks in the summer and that’s when we grill them, add them to salads, make pies and crisps and even peach margaritas (for adults, of course)!  Outside of those two weeks, I rely on our farmer’s market, but a high point for us is going peach picking on Long Island when we visit my parents.  Have you ever had a just-picked peach, warm from the sun?  Put that on your to-do list.  It will just make you happy.

Believe me, I am completely content eating a perfect peach and not messing with it, but I also know there’s a time and place for a good, homemade dessert.  This Peach and Blueberry Crisp is one of my go-to’s during the summer.  I don’t make it too sweet, in fact my fruit dessert mantra is “it should taste like fruit, not just sweet.”  Most crisp recipes toss the fruit with extra sugar and flour, which I don’t think is necessary at all.  I used to make crisp toppings with brown sugar until I discovered coconut palm sugar which I think is a great unrefined sweetener.  If you can’t find it, brown sugar works completely fine.  One of the best things about crisps is that you can make the topping way ahead and keep it in the fridge for a few days or even the freezer for a few months.  Do you even understand the implications of this?  You can freeze a whole gigantic batch of crisp topping right now and have a dreamy dessert at your fingertips whenever you want.  That means an easy dessert for summer entertaining or simply put a handful of fresh fruit in a ramekin and top with a handful of topping and bake away for a yummy crisp for you and only you whenever you need a little love.  Now we’re talking.

 

Peach and Blueberry Crisp

Ingredients
  

  • 6 medium peaches pitted and sliced, about 4-5 cups (you can peel if you want)
  • 2 cups fresh or frozen blueberries
  • 1 cup whole grain flour such as whole wheat pastry, white whole wheat or your favorite GF flour blend (I like Bob's Red Mill and King Arthur)
  • ¾ cup coconut palm sugar or brown sugar coconut sugar is less refined
  • ½ cup old-fashioned rolled oats look for gluten-free oats if you gluten intolerant
  • 1 teaspoon ground cinnamon
  • ½ cup chopped pecans optional
  • ½ teaspoon fine sea salt
  • 8 Tablespoons cold unsalted butter cut into pieces

Instructions
 

  • Preheat the oven to 350 degrees.
  • Place all fruit in an 8- or 9-inch baking dish or pie plate. Toss to mix them up a bit.*
  • Add all topping ingredients in the bowl of a mixer fitted with the paddle attachment. Blend until mixture resembles small peas. This can also be done by hand or with a pastry blender. Squeeze with your hands to create small clumps.
  • Arrange topping over fruit to cover.
  • Place baking dish on a cookie sheet and bake for about 45 minutes, or until bubbly and topping is golden brown.

Notes

*You can toss the fruit with a Tablespoon of sugar and a Tablespoon of flour to thicken the juices that develop, but it is not necessary unless your fruit is really juicy.
**Crisp topping can be made ahead and kept covered in the refrigerator for 3-4 days or frozen for up to 3 months.

Low-Sugar Strawberry Shortcake Recipe

Have you ever eaten a piece of fruit and said, “this is the best darn [insert name of fruit here] I ever had”?  I’ve been saying that daily with strawberries and every time I do, my kids roll their eyes with that look like, “here we go again.”  It’s just that when strawberries are so deep red, fragrant, juicy and sweet as they have been, I get emotional.  I also want to take a minute to enjoy them since their season doesn’t last forever.

I hadn’t made dessert for the kids in a while.  So I thought it would be fun to surprise them with something special after dinner on Sunday, and I wanted to incorporate strawberries.  One of the easiest and quickest desserts to make is fruit shortcakes.  The classic is strawberry shortcake, but I have used blueberries, raspberries, blackberries, nectarines and (my favorite) peaches.  I do not exaggerate when I say that you will have your biscuits on the pan ready to be baked before your oven is preheated.   For that reason, it’s an especially fun dessert to make with your kids.  They can knead the dough, cut out the biscuits, brush the tops with cream and sprinkle them with sugar.  I had a great time baking these with Mr. Picky, who was very proud when he announced to everyone that he made dessert.  The kids love strawberry shortcake because they can assemble their own and pile on as much fruit and whipped cream as they want.  I like it because it is a very low sugar dessert, maybe 1 1/2 teaspoons per person which doesn’t even get a sugar nazi like me worked up.  So many fruit desserts call for silly amounts of sugar which is unnecessary if the fruit tastes good to start.  I want the dessert to taste like the fruit I am using and not just sweet.

Traditionally strawberry shortcake is just a barely sweetened biscuit split with whipped cream and fresh fruit piled onto the bottom half of the biscuit.   But who wants to stick with tradition all the time?  Besides mixing it up with different fruits, we have also had fun using toppings other than whipped cream.  Have you tried my favorite way?  A biscuit with yogurt, strawberries and sliced almonds?  Freakin’ delicious.  When the kids were much younger, I used to do mini-shortcakes which are great for little ones or for a party .  You can add mini-chocolate chips to the dough or shave some dark chocolate on top of your berries and cream.   If whipped cream and yogurt aren’t your thing, try putting a can of coconut milk in the fridge for a few hours and scoop the top out and use that instead.  However you slice it, strawberry shortcake is a classic dessert that is always welcome!

Low-Sugar Strawberry Shortcake

Ingredients
  

  • Shortcakes:
  • 2 cups flour I like 1 cup whole wheat pastry and 1 cup all-purpose
  • ¾ teaspoon fine sea salt
  • 1 Tablespoon aluminum-free baking powder
  • 3 Tablespoons granulated sugar + additional for sprinkling on top
  • ½ cup 1 stick unsalted butter, cut into 8 pieces
  • 1 cup heavy cream half and half or whole milk
  • Whipped cream whole yogurt or coconut milk cream
  • Fresh sliced strawberries or other seasonal fruit
  • Whipped Cream:
  • 1 cup heavy cream
  • 1 Tablespoon granulated sugar
  • 1 teaspoon pure vanilla extract optional

Instructions
 

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  • Place the flour(s), salt, baking powder and sugar in the bowl of a food processor fitted with the steel blade. Pulse a couple times to blend. Add the butter and pulse until the mixture resembles small peas or pebbles. Transfer mixture to a large bowl.
  • Add the cream and blend with a fork until just combined.
  • Turn the dough onto a lightly floured surface and knead a couple times to bring the dough together. Roll out to a ¾-inch thick disc and cut into 2 ½ -inch circles with a round cookie cutter or small glass dipped in flour. Gather the scraps, roll again and cut more rounds until you have used up all the dough. Transfer the dough pieces to the prepared pan and space evenly apart.
  • This is optional, but it creates a light golden color: remove 1 Tablespoon of cream from the cup for whipped cream and use that to brush the tops of the shortcakes. Sprinkle with granulated sugar. Bake 17 minutes, or until puffed and lightly browned.
  • Cool the shortcakes slightly on a wire rack.
  • Whip the heavy cream with sugar until soft peaks form. Dollop on a split shortcake and serve with fresh berries.

Ginger and honey-glazed carrots

This is always the time of year that I appreciate living in California.  Whereas the ground in my parents’ New York garden is still frozen, I am pulling carrots out of mine.  Joy!  I planted a new variety this year called Purple Dragon and they are really something special.  Purple skins with an orange interior — what kid wouldn’t think that’s cool?  I always ask Mr. Picky to help me in the garden since that is supposed to be a strategy to help encourage your little ones to try new foods.  Not sure it’s working on my son, but my daughters both eventually became excellent eaters, so we’ll keep planting.

I have always felt that carrots are underrated.  They are quite nutrient-dense, especially in beta-carotene, a powerful antioxidant and anti-cancer compound which the body converts to Vitamin A.  Carrots are known for building healthy eyes and skin.  In fact, the beta-carotene in carrots can help protect your skin against sun damage.  But don’t forget to eat your carrots with a little high-quality fat to help you absorb all that valuable (and fat-soluble) beta-carotene.  So if you’re going to eat raw carrots as a snack, dip them into some hummus or a homemade vinaigrette.  Yum!

I’ve mentioned before that grated carrot salad is my absolute favorite way to eat carrots, but Ginger and Honey-Glazed Carrots is a close second.  Braising the carrots with honey, ginger, butter (or coconut oil) and a touch of water brings out this amazing caramel-y sweetness that you never knew existed.  I know how much we all love to roast vegetables with olive oil, but heating olive oil over 350 degrees for such a lengthy period of time oxidizes the oil and creates free radicals.  Not a big deal every now and then, but it’s nice to have some other tried and true methods to prep your vegetables that won’t damage your oil.

You definitely don’t have to use purple carrots in this recipe.   I’ve been making and loving Ginger and Honey-Glazed Carrots for years with the more familiar orange variety, as shown in most of the photos here.  Sometimes I buy thin carrots (see the 1st, 3rd and 5th photos) and cook them whole, which I think is so pretty.  But otherwise the larger carrots do just fine if I slice them thickly on the diagonal.  Heirloom carrots come in several fun colors besides purple.  I’ve seen yellow and white, as well.  But don’t peel the purple ones since the inside is orange (snore.)

Several of you have asked me for menu ideas when I post a recipe.  I’ll try to remember to offer a few suggestions going forward.  I’ve made these carrots twice in the past two weeks and everyone devoured them.  Once I served them with Spice-Rubbed Salmon and Coconut Basmati Rice (recipe coming soon), and the next time with Roasted Chicken, Potatoes and Fennel.  These carrots are really versatile and can go with many different entrees and side dishes, but I don’t normally serve them with another sweet dish.  Or you can just stand over the stove like I did with my daughter and eat them straight out of the pan with sweet honey carrot deliciousness dripping down our chins.

 

Ginger and Honey-Glazed Carrots

Ingredients
  

  • 1 ½ pounds carrots tops removed and peeled if necessary (or 1 ¼ lbs. without tops)
  • 1-2 Tablespoons unsalted butter or unrefined coconut oil or more if you like it very glazy like I do
  • ½ cup water
  • 2 ¼- inch slices of ginger
  • 1 Tablespoon raw honey vegans can use Grade A maple syrup
  • ½ teaspoon sea salt

Instructions
 

  • If the carrots are very small and thin, leave them whole. Otherwise, cut the carrots on the diagonal into approximately 1 ½-inch slices.
  • In a 10-inch skillet with a lid, such as a straight-sided skillet or braising pan, add the butter, water, ginger, honey and salt. Turn the heat to high and stir to combine. When the mixture comes to a boil, add the carrots and turn heat to low. Cover and simmer for 5-10 minutes (5 minutes for thin carrots, 10 minutes for thick wedges)
  • Remove the lid and simmer until all the liquid has reduced to a glaze and carrots are tender, approximately 10 more minutes. Remove ginger and serve warm or at room temperature.

“Special occasion” chicken pot pie and other ideas for a delicious Valentine’s Day

Chicken pot pie is one of my family’s favorite meals and this recipe, adapted from The Loaves and Fishes Cookbook, is the best one I’ve ever tried.  Pot pie falls in my “10%,” that is 90% of the time I try to eat as whole and clean as possible, and the other 10% is what it is.  For the last 15 or so years, I have made pot pie once a year and when I do, my son always asks me, “is it a special occasion?”  Many years ago, my younger daughter and I hosted a mother-daughter Valentine’s Day dinner at our home and we made a few of these pot pies with hearts cut out of the crust.  Since then, we decided to make this our family’s Valentine’s Day tradition.

 

Chicken Pot Pie is really comfort food at it’s best.  It’s a perfect winter dinner and I’ve never met a chicken-eating child (even Mr. Picky) or adult that didn’t think this particular recipe was just delicious.  Most pot pies are a blend of chunks of chicken meat and vegetables in a savory, tasty mixture and topped with a crust of sorts.  Usually I make a savory pastry crust, but in a pinch I have made a drop biscuit batter and topped the casserole with that.  Even though this recipe is pretty perfect as is, I think you can have equal success with leftover turkey, adding in different vegetables such as parsnips or turnips, or using store-bought pastry crust or puff pastry.

Pot pie is definitely not something you can decide at 6:00 pm that you would like to make for dinner and expect to sit down at 6:30.  But even if you are typically out of the house  in the few hours before dinner, there is no reason to be discouraged from making this recipe on a weeknight.  You just need to plan ahead and follow a few of these tips:

  • You can use pre-cooked chicken from a rostisserie or whole roasted chicken and shred the meat the day before.
  • You can chop your carrots and onions the day before or make the entire filling the day before and pour it into your casserole dish and refrigerate it, covered until you’re ready to bake.
  • You can make your pie crust a few days before.  Allow it to sit out of the refrigerator for about 20 minutes before rolling it out.  Or you can roll out the whole thing, lay it on parchment or plastic wrap and fold it in quarters to store it in the fridge.
  • Pot pie freezes very nicely, well wrapped.  It is best to thaw it for 24 hours in the refrigerator before baking.
  • If you use store-bought crust, defrost the crust before laying it on the casserole.
  • Puff pastry is also an easy way to cover the casserole.  Follow the directions on the box.
  • You can also use drop biscuits to cover instead of a crust.
I actually debated whether or not to post Chicken Pot Pie at all since it is not completely consistent with both the way I eat and the kind of food I teach in my classes.  But what I do try to encourage is cooking from scratch and with love and eating together as much as possible.  And I think we can agree that there’s as much to gain from those habits as there is from vitamins and antioxidants.
 
 
Chicken Pot Pie not your thing?  Here are some other ideas for making everyone feel a little extra love on Valentine’s Day:
 
  • Check out the recipe for Salmon with Roasted Beets and Blood Oranges.  You can make the recipe as is, or you can slice the cooked beets into 1/4-inch slices and cut out hearts with a heart-shaped cookie cutter.  Heart-shaped beets are an adorable addition to any salad.  See next idea for what to do with the leftover beet scraps.
  • For a shocking, hot pink vinaigrette, place 1/4 cup of chopped, cooked beet pieces in a blender with your favorite vinaigrette ingredients and process until completely blended.  Pick up some cooked beets from the supermarket salad bar to save time.  In this picture I used Everyday Salad Dressing #2, but stirred in the shallots after the vinaigrette was completely blended with the beets.  My kids freaked for it!
  • Orange and Rosemary-Glazed Chicken — Easy, delicious and fool-proof.  Serve with a rice pilaf with dried cranberries and a green vegetable like broccoli or spinach.
  • Fish in parchment — Season halibut with salt and pepper.  Add a dollop of pesto or slivered basil leaves and some halved cherry tomatoes.  Serve with Lemon and Cumin-Scented Quinoa or roasted potatoes and sauteed kale or roasted cauliflower.
  • Spice-Rubbed Wild Salmon served with baked sweet potato wedges and steamed asparagus with that fun pink vinaigrette.
  • Whole Roasted Chicken — comfort food at its simplest.  Serve with roasted root vegetables and green salad.
  • Chicken Paillard — serve with roasted cherry tomatoes instead of fresh.
  • Pantry Pasta with meatballs and a green salad
  • Chicken Noodle Soup with pasta hearts — cook lasagne noodles and cut out hearts with cookie cutter.  Add to soup.
  • Raspberry Sauce — Make a simple syrup by combining 1/3 cup water and 1/4 cup sucanat, coconut palm sugar or natural cane sugar in a small saucepan over medium heat.  Stir the mixture until sugar is dissolved.  Place 5 ounces (about 1 cup) frozen raspberries and simple syrup in blender.  Blend until smooth.  Strain if you don’t like seeds.  I like to serve the sauce with fresh raspberries on top of heart-shaped French toast, pancakes or ice cream.  Heart-shaped pancakes are not realistic for more than two people.  Heart-shaped French toast is great for a larger brood.
  • Cut a heart out of a piece of bread for sandwiches or toast.  Toast the hearts and use as croutons.
  • Hot pink hummus with heart-shaped chips — check here for how to make baked tortilla chips, but use a heart-shaped cookie cutter instead of cutting the tortillas into wedges.  Same basic steps to make pita chips.
  • Chocolate Fondue — Set a heat-proof bowl over a pan of simmering water.  Add 12 ounces of chopped dark, bittersweet or semisweet chocolate and 3/4 cup heavy cream.  Whisk until chocolate is melted.   Serve with fresh strawberries, apple wedges, or chunks of banana.  Always a hit for minimal effort!
  • Chocolate Chip Oatmeal Cookies — makes a great Valentine gift!

"Special Occasion" Chicken Pot Pie

Ingredients
  

  • PASTRY
  • 2 cups unbleached all-purpose flour
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 12 Tablespoons 1 ½ sticks unsalted butter, cut into pieces
  • 1 Tablespoon fresh lemon juice
  • ¼ cup ice water
  • FILLING
  • 3 pounds boneless skinless chicken breasts (or equivalent amount of cooked chicken, shredded or chopped into bite-size pieces)
  • ½ cup 1 stick unsalted butter
  • 2 medium onions peeled and chopped
  • 3 carrots peeled and diced
  • ½ cup unbleached all-purpose flour
  • 1 ½ teaspoons sea salt
  • 1 teaspoon paprika
  • 4 cups chicken stock
  • 1 teaspoon Worcestershire sauce
  • 1 10- ounce package frozen peas thawed
  • ½ cup chopped fresh parsley
  • 1 egg yolk
  • 1 Tablespoons heavy cream or whole milk

Instructions
 

  • To make the pastry, place the flour, salt, pepper and butter in the bowl of a food processor fitted with the metal blade. Pulse 5 times. Add the lemon juice and water and turn on the machine for 3 seconds. Using your hands, scrape the dough onto a floured surface and work it together into a smooth ball. Cover with parchment paper or plastic wrap and chill for 30 minutes.
  • Preheat the oven to 375 degrees.
  • To cook chicken: bring a large pot of water to a boil and add chicken breasts. Simmer for 7-8 minutes. Drain. Save the pot for later use. When chicken is cool enough to handle, cut into bite-size pieces and add back to pot. It is fine if the chicken is not cooked all the way through. Set aside.
  • Heat butter in a large skillet over medium heat. Add onion and carrot and sauté until onion is translucent. Add the flour and sauté for 3 minutes over medium-low heat, stirring constantly. Add the salt and paprika. Mix well. Add the chicken stock gradually while stirring and bring to a boil. Stir in the Worcestershire sauce. Taste the mixture for seasoning and add extra salt and pepper if needed.
  • Add peas, parsley and onion-carrot mixture to chicken in the pot and combine well. Transfer to a 13 x 9–inch casserole dish.
  • Roll out the pastry dough 1-inch larger than the area of the casserole dish. Cut hearts from the dough with cookie cutter, if desired, otherwise make a few small slits in the dough for steam to escape. Place the dough on top of the filling and crimp the edges.
  • Beat the egg yolk with the cream and brush the top of the pastry with the mixture. Place dish on top of a baking sheet and bake for 50-60 minutes or until golden brown.

Notes

You can cut this recipe in half and bake it in an 8 x 8-inch pan. You can also make individual pot pies in oven-proof bowls or large ramekins.

Cornbread (with quinoa!) Recipe

Let me just start out with a disclaimer — I am not from the South.  I am a Yankee, which means I like my cornbread with half cornmeal and half flour and a drop of sweet and that’s that.  If you are a true Southerner and wouldn’t dream of adding honey or sugar or maple syrup to your cornbread, I hope we can still be friends.  I didn’t grow up eating it and I have no recipe that was passed down from my grandmother.  But my husband and my kids love cornbread, especially at certain times of the year and I love preparing them good food that makes them happy.

After I posted my Thanksgiving menu a few months ago, I had many inquiries about my cornbread recipe, so I figured I would share it just before the Super Bowl when you might be whipping up a big pot of chili.  Even if you’re not eating something that goes well with cornbread, you will be delighted with this quick bread just by itself.  My husband loves to split a wedge of the bread, toast it and slather it with a little more butter or honey or strawberry preserves for a nice treat.  I typically like a barely sweet cornbread, which this is if you use 4 Tablespoons of honey.  You can adjust the sweetness level according to your preference, but the best part about this bread is how moist and corny it is (even after several days.)     I’m not sure anyone in my family knows that I add cooked quinoa to the batter.  And it’s not because I’m the kind of person that sneaks healthful food into recipes and doesn’t say anything.  I’m not clever enough for that.  But I do try to use food efficiently and one day I had a bit of quinoa left in the fridge and since quinoa and corn go really well together, I decided to add it to the corn bread batter.  You don’t notice it at all, except that I think the quinoa adds a nice moistness to the bread and a great boost of protein.

I’ve made this cornbread so many times with different combinations of ingredients based on whom I am feeding or what is available to me in the pantry and it has never disappointed.  Although I’ve learned something about how certain foods affect the end result.  Dairy, such as milk and butter, result in a slightly more golden color to the finished bread.  Coconut oil leaves a slightly sweet, subtly tropical aftertaste.  The whole spelt flour is slightly coarser than whole wheat pastry, and made the bread feel a little more “whole grain.”  If you use olive oil, you can taste it if the bread is still warm, but not after it has cooled a bit, but that will also depend on the kind of olive oil you use.  Take this as a foundation recipe and have fun with it.  Drop the honey and add diced cooked bacon, finely chopped jalapenos, or shredded cheese.  Or prepare as is with some vanilla extract and blueberries or raspberries for a sweet treat.

Are you entertaining for the Super Bowl?  I would love to hear what you’re making.  I am making guacamole and baked chips, but I’ll also serve it with jicama.  I’ll make a giant pot of Vegetable Chili tomorrow and reheat on Sunday.  I am also doing a Baked Potato Bar with lots of toppings (what in the world is easier to make than a baked potato?)  I actually love a baked potato topped with chili!  A big chopped salad and cornbread for sure!  Daughter #1 told me she’s in charge of desserts.  I’m nervous.  Other fun foods for the big game can be Roasted Vegetable and Black Bean Enchiladas (especially the casserole version), a Taco or Fajita bar, Cilantro-Lime Slaw or a make-your-own sandwich bar with grilled chicken.  I know my family in NY will be making some form of baked pasta, meatballs, sausage and peppers.  Know your audience, I guess!

Cornbread (with quinoa!)

Ingredients
  

  • 1 cup whole wheat pastry flour or whole spelt flour or your favorite GF baking mix
  • 1 cup yellow cornmeal preferably stone-ground*
  • 2 teaspoons aluminum-free baking powder
  • ½ teaspoon aluminum-free baking soda
  • ½ teaspoon fine grain sea salt
  • 1 cup buttermilk**
  • ½ cup melted unsalted butter 1 stick or coconut oil or olive oil
  • 2 large eggs***
  • 4-6 Tablespoons honey or Grade A maple syrup I use 4 Tbs.
  • 1 cup COOKED quinoa optional
  • 1 cup fresh or frozen corn kernels optional

Instructions
 

  • Preheat the oven to 375 degrees. Line a 12-cup muffin pan with paper liners or grease an 8 x 8-inch baking dish (I usually dip a pastry brush in the melted butter I’m using in the recipe and grease the pan that way.)
  • In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda and salt. In a medium bowl or a blender, combine buttermilk, melted butter, eggs and honey until well blended. Pour wet ingredients into dry ingredients and stir until just combined. Stir in the corn kernels. Using an ice cream scooper, divide the batter into the muffin pan or pour it into the prepared pan.
  • Bake the muffins for 15-18 minutes, or until the tops are golden and a toothpick inserted in the center of a muffin comes out clean. Or bake the cornbread in the 8 x 8 pan for 30-35 minutes. Cool for 5 minutes on a wire rack before removing muffins from the pan.

Notes

*If you like a more tender, less grainy cornbread, increase flour by ½ cup and decrease cornmeal by ½ cup.
**Or ½ cup whole unsweetened yogurt + ½ cup milk of choice. Or 1 cup dairy-free milk + 1 Tablespoon lemon juice or apple cider vinegar
***Or 2 Tablespoons ground flax meal mixed with 6 Tablespoons warm water. Allow to sit 10-15 minutes. And then allow batter to sit 5-10 minutes before baking.
****To cook quinoa: Rinse quinoa and then cook 1 cup quinoa in 1 ¾ cups boiling water covered for 15 minutes. Remove from heat and allow to sit for 10 minutes, covered. Makes about 3 cups cooked quinoa.
