So much happening, friends!  I uploaded the February cooking class YAY!  It’s so good!  Every month I pre-record a brand-new cooking class which you can watch on your own time.  This month’s menu is:

  1. Lemony Parmesan Soup
  2. French Onion Soup Skillet Chicken
  3. Fennel and Celery Salad
  4. Roasted Truffle Potatoes 
  5. Torta Caprese (this is a flourless chocolate cake famous on the island of Capri)

Next, Super Bowl Sunday is next weekend.  It is the second biggest eating day of the year, so I need to start prepping NOW.  I have way too many recipes I could link, so I gave you just a sampling.  I’m doing a chili and taco bar this year! Here’s your dinner planner for the week:

Meatless Monday: Baked falafel with your favorite accompaniments like pickled onions, tahini sauce, lettuce wraps or pita.  You can also pan fry the falafel in olive oil if you want to cook them faster.  It might sound odd, but creamy cabbage and avocado slaw is delicious with falafel!

Tuesday: Slow cooker chicken tacos, tortillas, cilantro-lime slaw, cooked rice, salsa, guacamole

Wednesday: Spring salad with oranges, radish, avocado and pumpkin seed brittle (this could be a full meal if you wanted to add some cooked quinoa and/or feta cheese to the salad), naan pizzas with spinach sauteed in garlic and red pepper flakes and topped with kite hill ricotta cheese

Thursday: Branzino with green olive and fennel tapenade, roasted butternut squash and cauliflower

Friday: Chicken shawarma burgers from Quicker than Quick, arugula salad with pine nuts, radishes, cucumber and everyday salad dressing #1, roasted sweet potato wedges or potato wedges (simply seasoned with garlic powder, paprika, salt and pepper)

Saturday Brunch: viral feta fried eggs (but I’m going to cook the yolk through because I am the only person on earth who doesn’t like runny yolks!)

Superbowl Sunday: French Bread PizzasTaco pizzas, any sliders from my upcoming Instagram slider week series (beginning on 2/4), Mini carrot dogs in a blanket + TOO MANY THINGS I CAN MENTION, but here are some of my other favorite options:
