I have made it through two weeks of school lunches!!! Considering I had set my alarm clock 4 times in a year a half and made zero school lunches, I think I’m doing great!  I’m sure my son’s senior year of high school is off to a great start, too LOL.

This week I completed Week 1 of the Raising Healthy Eaters bootcamp and I am thrilled with the two groups participating and the supportive energy we have going!  If you’re trying to plan ahead, the bootcamps I am running in October will be Plant Based 2.0 AND ….Thanksgiving!!!! Totally excited for both!  Here’s your dinner planner for the week:

Meatless Monday: tex-mex stuffed sweet potato skins, some sort of green salad

Tuesday: Pasta with 5 minute cherry tomato sauce and shrimp (add the shrimp to the tomatoes just as the tomatoes are done and sauté until the shrimp are cooked through – about 3-4 minutes), grilled squash salad

Wednesday Kol Nidre (Day before Yom Kippur): (My sister-in-law hosts, but here are some ideas) Brisket, smashed potatoeshoney lemon green beans, green salad with everyday salad dressing #2

Thursday (Yom Kippur Break fast): We do part deli (because it’s traditional for Hubs’s family) and part homemade (because I like to cook good stuff!).  Spanakopita, frittata, spinach and quinoa salad with feta, salads (like this Delicata Squash and Apple Salad, Kale Salad, Mejadra, tuna salad, chicken soup, noodle kugel (my mother-in-law’s recipe – not healthy LOL)

Friday: Leftovers from the day before or roasted fish with chermoula and Moroccan roasted carrots (these would also be good for Kol Nidre.)

Saturday brunch: Deconstructed bagel and lox salad (awesome salad for Yom Kippur break fast, too)

Sunday: Oven baked gigantes beans with tomato, dill, and feta, with either a nice piece of fish or go vegetarian with some simple cauliflower steaks

 

Here’s what you can do in advance if it helps you:

Sunday:

Roast sweet potatoes. You can also make the filling and assemble them.

Make salad dressing

Wash greens

Tuesday:

Assemble spanakopita

Shred sweet potatoes

Trim green beans

Wednesday:

Assemble noodle kugel

Saturday:

Cook beans
