There’s a lot of excitement in the Salzman household lately. My oldest daughter who lives in Dallas is going back to the office. My younger daughter just got a job in Boston and is moving this summer. Mr. Picky, my youngest child (and who truly can no longer be considered “picky” by most standards), has just completed the 11th grade! And, as many of you know, we are moving this week! It’s a house just a mile away, and I will take you with me. However our LAST Instagram live from this kitchen will be on Monday!
Here’s your dinner planner for the week:
Meatless Monday: Zucchini rollatini with polenta
Tuesday: Peach salad with chili and lime, other stone fruit works too! served with shrimp or a simple piece of fish.
Wednesday: Fattoush Salad, chicken souvlaki, rice or cauliflower rice if you need more
Thursday: Cod acqua pazza
Friday: Mediterranean quinoa salad, slow cooker whole roasted chicken
Saturday brunch: Deconstructed bagel and lox salad (this would also be an awesome brunch for Father’s Day)
Sunday: Father’s Day! Here are a few options (there are plenty more though) to make for the dads in your life:
Meat and Fish
Spiced halibut and lime skewers
Deconstructed Bagel and Lox Salad
Vegetarian
Banana French Toast Casserole from KM
Sides
Grilled corn and black bean salsa
Pea pesto and burrata crostini
Chopped grilled vegetable salad
Here’s what you can do in advance if it helps you:
Sunday:
Make cashew-cauliflower ricotta if making from scratch
Make marinade for chicken souvlaki
Make tzatziki
Wednesday:
Cut veggies for cod acqua pazza (store cut potatoes in water)
Thursday:
Cook quinoa
Saturday:
There are so many things that can be prepped in advance. You can wash greens, make marinades, chop vegetables, make a dessert.
