Here’s your dinner planner for the week:
Meatless Monday: Spiced Chickpea Stew with Coconut and Turmeric, grilled naan, sautéed Swiss chard
Tuesday: no-fail roast chicken + Spinach salad with grilled apricots and honey-mustard dressing
Wednesday: Pasta with vegan eggplant bolognese p. 181 from QTQ, Deconstructed pesto chickpea salad
Thursday: Moroccan chicken with dates, Couscous with dried apricots and herbs (I will omit the apricots), Moroccan carrot and beet salad
Friday: roasted fish (just olive oil, salt and pepper), Cauliflower with Tomatoes, Dill and Capers, Lemon and cumin-scented quinoa
Saturday (the first night of Passover): See this post for some menu ideas. It’s not usually a holiday I host, but for the times I have hosted, I made brisket, a roasted vegetable platter, perfect spring salad, sweet potato casserole (using coconut instead of corn flakes), matzo lasagne with vegetables, baked chicken with artichokes and capers, halibut with chermoula, mazto ball soup, Passover popovers, always a fruit platter, coconut macaroons, fallen chocolate cake, lemon ice torte, cashew cheesecake, strawberry-rhubarb sauce, salted caramel cheesecake bars (use grain-free cookies for the crust), and carrot banana cake (using this recipe). Basically, any recipe that is gluten-free (other than containing oats) can be Passover-compliant unless your family follows the old rules of no grains and no legumes. I have so many grain-free desserts – other favorites are the Torta Caprese, the grain-free carrot cake and the flourless chocolate cookies.
