Easter has always been my mom’s holiday.  She hosts a beautiful luncheon with a light pasta primavera (we are Italian, so there’s pasta at every holiday!), Ina’s roasted rack of lamb, mixed roasted seasonal vegetables and potatoes, and a spring green salad. For dessert, she makes coconut macaroons, lemon-ice torte, fresh berries, and my aunt brings boxes of chocolates from Al Richard’s shop in New Jersey.  I still dream about the chocolate coconut egg! I provided some inspiration in this week’s dinner planner, but there are so many recipes on the website now, it’s hard to choose! Here’s your dinner planner for the week:

Meatless Monday: Moroccan vegetable soup + rice if you want something more

Tuesday: Miso glazed black codpea and mushroom sauté

Wednesday: Not–Fried Rice – Mexican version (based on this recipe but sub cilantro for basil), with leftover rice (if you made it on Monday) and chicken taco meat or cooked black/pinto beans, kale or cabbage, bell peppers, onions and whatever veggies you need to use up

Thursday: Turkey and brown rice stuffed bell peppers, clean-out-the-fridge green salad

Friday: Halibut and lime skewersfarro with golden beets, cucumber, feta and mint vinaigrette

Saturday Brunch: Wedge Salad with Creamy Dressing, sliced citrus fruit
