Check last week’s dinner planner for Cinco de Mayo ideas and this week I have some delicious inspiration for Mother’s Day. Tip: Tell your family early what you’d like. For those of you who will be without your moms on Mother’s Day, I am holding space in my heart for you. I know it can be a tough day. Here’s your dinner planner for the week:
Meatless Monday: Sheet Pan Veggie Quesadillas, guacamole + green side salad
Tuesday: Green goddess salad, serve with roasted fish.
Wednesday: Baked chicken with tomatoes, olives and capers (I’m going to stir in a lot of spinach at the end and use cherry tomatoes to keep it light), roasted smashed potatoes
Thursday: Pan-seared Moroccan Salmon from David Leite, cauliflower rice, roasted carrots
Friday: Chicken Shawarma p. 188 from KM, with accompaniments (lavash or cauliflower rice, lettuce, tomato, cucumber, olives, tahini, yogurt). I have also used the spice mixture + 1 tsp garlic powder and 2 Tbs olive oil on cauliflower florets and done a roasted cauliflower shawarma!
Saturday Brunch: Cherry cacao açaí bowl
Sunday (Mother’s Day): Grilled pineapple salad with avocado and mojito dressing, served with your favorite protein, cucumber cocktail or my favorite Spicy Grapefruit Mocktail on IG
Below are some delicious options that would be perfect for a Mother’s Day breakfast-in-bed!
Yogurt and Granola Parfait (try basic granola, dark chocolate granola, peanut butter granola or the grain-free granola from my cookbook)
Mushroom and leek quiche with sweet potato crust or Swiss chard frittata or Egg-free Frittata
Chia pudding: try vanilla, chocolate, matcha or lemon-ginger
Grain-free lemon poppyseed muffins, Grain-Free Blueberry Scones, Date-sweetened banana bread or Marbled Banana Bread
Pancakes: Grain-free sweet potato pancakes, fluffy whole grain lemon poppyseed ricotta pancakes, buttermilk pancakes, grainless banana pancakes, multigrain pancakes from my cookbook,
Whole grain buttermilk waffles
Honestly, there are too many good brunch-y recipes to mention including ones from my cookbooks like Grain-Free Apple-Blackberry Crisp (KM) and Meyer Lemon-Olive Oil Cake (QTQ).
Anything from the May brunch class would be perfect!
