As we head into Memorial Day weekend, I am taking a moment to honor and remember the brave men and women who gave their lives in service to our country. While this holiday also marks the unofficial start of summer, itโs a meaningful time to gather with loved ones, enjoy good food, and reflect. This weekโs dinner planner includes fresh, seasonal meals that are easy to pull together after a long weekend of festivities. Here’s your dinner planner for the week:
Meatless Monday (Memorial Day): Lentil and grilled eggplant salad, Tasty Turkey Burgers, Wild Salmon Burgers, The Best Grilled Flank Steak, Grilled Vegetables with Lemon-Basil Dressing or Red Pepper Vinaigrette or Chopped Grilled Veg Salad, Grilled Potato Salad Mexican Street Corn-Style, Sparkling Blackberry Shrub, Apricot-Cherry Almond Crisp, Grilled chicken with cherry tomato vinaigrette, Grilled lemon-mustard-rosemary chicken, Quinoa tabbouleh, Quinoa and Jicama Salad with Avocado Dressing, Asada mushroom tacos, roasted strawberry bruschetta (or see this post for more ideas for your memorial day bbq) + I have so many great recipes in both my books (the black bean and mushroom veggie burger from Quicker Than Quick is perfection and can be grilled!) – And check outย this Instagram reelย I posted for the most delicious Spinach-Artichoke Chicken Burgers!
Tuesday: Leftover Tips: Donโt toss those cruditรฉs – chop them up and add to soups, stir-fries, or roast them to toss into salads. Leftover cooked burgers can be crumbled into tomato sauce, stir-fried with riced veggies, or mixed with rice and seasonings and stuffed into bell peppers for another easy meal. Or crumble leftover burgers in myย Turkey Bolognese Spaghetti Squash Casserole.ย Swap in lentils for a plant-based version. Serve with a fresh green salad and Everyday Salad Dressing #1.
Wednesday: curried chicken salad on lettuce cups, grated carrot salad with avocado
Thursday: Asian stir-fry on a sheet pan (using this method)ย + rice, cauliflowerย rice or noodles
Friday: Grilled Portobello Burger, Lemony Greek Potatoes, Roasted Cherry Tomato and Feta Salad
Saturday brunch: Chocolate Peanut Butter Banana Oatmeal Smoothie + Hard-Boiled Eggs
Sunday: simple roasted salmon + Wild Rice Bowls with Roasted Beets, Goat Cheese, and Preserved Lemon Drizzle from GOOP
