If you are looking for Super Bowl ideas, check out last week’s dinner planner. I am going pretty traditional with a lot of appetizers like spinach-artichoke dip, guacamole, salsa and chips, vegan queso, carrot dogs in a blanket and friends are bringing stuff too. Then I’m doing two types of chili, a topping bar, corn muffins, a big salad with slow cooker chicken taco meat on the side and my friends are bringing desserts! I have Valentine’s Day ideas for you and then maybe you get to relax next weekend for the holiday weekend! Here’s your dinner planner for the week:
Meatless Monday: Use those Super Bowl leftovers! Monday might not be plant-based this week depending on what you made Sunday. For a meatless Monday, make Vodka Sauce Chicken Parmesan Sliders with Mozzarella and Pesto with my Vegan Crispy “Chick’n” as a sub for chicken. My go-to is usually this Chicken and Lime Soup with Avocado, but you can also do Taquitos with homemade guacamole, Mexican sauteed greens
Tuesday: Wild Salmon Burgers, dandelion and radicchio salad
Wednesday (Valentine’s Day): I always used to make my Chicken Pot Pie (you can omit the chicken and sub extra veggies for a vegetarian version) with a simple fresh side salad. This year I’m making my Sour Cherry Almond Cake for dessert. Vegan brookies or molten chocolate cakes are also amazing options I have made for Valentine’s Day in the past! This olive oil cake with citrus glaze is spectacular. Other dinner options that I love for Valentine’s Day are Salmon with Beets and Spinach, or Hearty Vegetable Vegan Lasagna, or even Lasagne Cupcakes along with a lightly tossed green salad (for fun I take out my mini heart shape cookie cutter and cut radishes and avocado into hearts.) Another dessert option could be these Mini Flourless Chocolate Cakes with Raspberry Sauce or Chocolate Bundt Cake with Chocolate Ganache. Yum! If you’re making a Valentine’s Day breakfast instead of dinner I love making these pink Pitaya Pancakes. Also, this Valentine’s Day Snack Board is the perfect snack.
Thursday: Chicken pot pie soup (or leftovers soup) – take your leftovers and cut them into bite-size pieces, if necessary. Put in a pot and add enough chicken or vegetable stock to create a soup consistency. Heat and serve!
Friday: Cauliflower and kimchi “fried rice” from Gwyneth Paltrow’s book “It’s All Easy”, topped with sauteed shrimp
Saturday Brunch: Flax Pudding with berries. The recipe is available in my newsletter.
Sunday: South American Roast Chicken with Green Sauce from Kitchen Matters, (my favorite chicken recipe ever and the best sauce ever), sautéed sugar snap peas with mint (olive oil, garlic salt and pepper + mint at the end)
