Happy weekend, friends! I’m transitioning dinner planners to summer right about now. In Southern California, we’re starting to see the beginnings of stone fruit and tomatoes which always makes me giddy. I also start to cook a little more simply and lighter. I have noticed more people cooking at home lately because restaurant prices are really high. That said, so are grocery prices! I will do an upcoming newsletter on saving money at the grocery store. It will always be less expensive to cook at home and in general, better for your health. That’s why I started teaching cooking classes 15 years ago! Here’s your dinner planner for the week:
Meatless Monday: Romesco pasta salad with basil and parmesan from Bon Appetit, roasted eggplant
Tuesday: Barley and corn tabbouleh, spiced halibut and lime skewers (I’ll add some zucchini to the skewers to get in my veggies)
Wednesday: Instant pot creamy dijon chicken p. 203 from QTQ, quick sauteed zucchini from KM if you have leftover from Tuesday, or veggie of choice
Thursday: Baked Asian Turkey Meatballs, black rice (aka forbidden rice) and Asian slaw
Friday: Wild fish in parchment with summer herbs + spicy honey lemon green beans
Saturday Brunch: Socca with Mediterranean toppings
Sunday (Father’s Day): Here are a few options (there are plenty more though) to make for the dads in your life:

Chicken Kabobs with Green Goddess Tzatziki
Spiced halibut and lime skewers
