Happy weekend!  I had a really busy week and I have a busy weekend, too.  But I will squeeze in a grocery store run this morning and do some prep today for Super Bowl Sunday.  I wish for a close and exciting game and some good commercials + all the vegan queso!!!!  Have fun!

Here’s your dinner planner for the week:

Monday: Chicken and Avocado Soup using leftovers from the Super Bowl. You could also use leftover crudites in a salad or a soup, leftover salsa in the slow cooker chicken tacos or any leftover cooked/uncooked veggies in a frittata or quesadilla.

Tuesday: Broiled fillet of sole with lemon and white wine from my cookbook and fennel salad with citrus, avocado and ricotta salata

Wednesday: Chipotle cauliflower tacos (My husband likes these with some sautéed chickpeas mixed with the cauliflower) with jicama slaw or pineapple slaw from my cookbook, drunken beans

Thursday: Curried veggie rice bowls from The Speckled Palate

Friday: Greek sheet pan chicken with lemons and potatoes and roasted carrots with garlic yogurt

Saturday Lunch: French Onion Soup

Sunday: Roasted turkey breast and puree of broccoli (this will make a lot of leftover turkey that you can use for lunches or turkey chili)

 

Here’s what you can do ahead if you need to:

Sunday

Wash/dry greens and herbs

Make chicken or vegetable stock

Make salad dressings

Supreme (segment grapefruit)

Prep (wash, dry, cut) cauliflower

Make seasoning for cauliflower tacos

Tuesday

Soak beans

Wednesday

Cook brown rice

Prep veggies for rice bowls

Thursday

Marinate Chicken

Saturday

Brine the turkey
