We are getting into the busy season and also you may be going out more or invited to holiday parties.  This is why I make sure I plan easy healthy meals at home.  I will certainly enjoy all the festive foods when I’m out, but I don’t let my normal eating fall by the wayside when I’m at home.  I do these dinner planners to provide inspiration for your meals for the week so you can plan them in advance, but don’t think that I don’t eat a couple scrambled eggs with leftover veggies for dinner if I’m too tired to cook.  Or pull a frozen soup out of the freezer or make a saute of a bunch of chopped veggies and add some canned beans or frozen peas. On another note, my monthly online cooking class for December is up and so fabulous for any holiday dinner, either Hanukkah or Christmas or otherwise.  I would love for you to consider taking a class!  I film a new class every month with all new recipes.  You watch the class on your own time.  It is not live!  But I do host a live office hour to answer any questions you have about anything.  Here’s your dinner planner for the week:

Meatless Monday:  Roasted vegetable and black bean enchiladas verdesMexican sautéed greens

Tuesday: Chinese chicken salad p. 64 from Quicker Than Quick (there is NOBODY who doesn’t think this is the best Chinese Chicken Salad dressing on the planet!!)

Wednesday: Butternut squash lasagne (give this a try to potentially make for Christmas!)

Thursday (first night of Hanukkah): slow cooker whole roast chickenonion-braised brisketmaple mustard roasted vegetables, roasted fish, use this methodMoroccan Roasted Carrots with Orange and LATKES! Recipes for skillet latke,  zucchini latkes and Brussels sprouts latkes. I also just posted an IG reel on how to prep make-ahead latkes.  A non-latke option if you get tired of latkes, are these cauliflower frittersKale salad with creamy lemon dressing,  homemade applesauce

Friday: Baked chicken with tomatoes, olives and capers served with skillet latke and a kale Caesar salad

Saturday Brunch: Apple Fritter Skillet Cake + Greek yogurt

Sunday: DIY bowl night with black beans, rice, quinoa, lettuce, salsa, vegan queso, roasted brussels sprouts, chipotle cauliflower, and pickled onions (on page 109 of KM)
