For those of you observing Passover on Monday evening, I hope you are able to spend the holiday with loved ones.  If you are cooking or contributing to a seder, please check out my Passover roundup for some inspiration.  Although truly almost any recipe can be made Passover-compliant.  If you take my monthly online cooking class, I am hosting live “office hours” on zoom this Wednesday, April 24th at noon PT.  Check your email for the link!  Here’s your dinner planner for the week:

Monday (the first night of Passover): See this post for some menu ideas. A few years ago I made brisket, a roasted vegetable platter, perfect spring saladsweet potato casserole (using coconut instead of corn flakes), matzo lasagne with vegetables, baked chicken with artichokes and capershalibut with chermoula, mazto ball soup, Passover popovers, fruit platter, coconut macaroonsfallen chocolate cakelemon ice tortecashew cheesecakestrawberry-rhubarb saucesalted caramel cheesecake bars (use grain-free cookies for the crust), and carrot banana cake (using this recipe).  Basically, any recipe that is gluten-free (other than containing oats) can be Passover-compliant unless your family follows the old rules of no grains and no legumes.

Tuesday: Seder leftovers or reference this post if you are having a seder on Tuesday as well.

Wednesday: Orange-rosemary Glazed Chicken (use coconut aminos in place of shoyu/tamari for a Passover-compliant meal) + Roasted Rutabagas with Balsamic + a simple green side salad

Thursday: Sheet pan shrimp with broccoli p. 261 from QTQ, black rice or riced vegetable of your choice

Friday: Mixed greens with green beans and cherry vinaigrette, grilled steak. For more substance or a plant-based option, add cooked quinoa to the salad

Saturday Brunch: Turkey sandwiches on The Best Grain-free Sandwich Bread. I like to throw in veggies on my sandwich like arugula, cucumbers, or sprouts.

Sunday: Chicken, Potatoes, and Leeks with Pine Nut Gremolata by Leah Koenig + sauteed spinach
