Dinner Planner – Week of December 30, 2024

Happy Almost New Year!!  I hope you had a joyous Christmas and/or Hanukkah celebration with your loved ones. It is a special time of year for me when I am able to have quality time with my family and my kids.  I cherish every minute. A few notes – if you take my monthly online cooking class, the January class is ready, but we will send it to you on either January 2 or 3 just so it doesn’t get buried in your inbox.  The recipes are ideal for starting the new year on the right foot!

Here’s your dinner planner for the week:

Meatless Monday: Broccoli stalk soup with Skillet Latke or grilled cheese sandwiches

Tuesday (New Year’s Eve): Did you catch my Appetizers-for-Dinner post in my newsletter?  We had so much fun and will make this a tradition.  Here are some tried and true appetizers for NYE: Polenta Crostini with Spinach and Capers, Buckwheat Blinis with Smoked Salmon and Lemon Creme Fraiche, Mini Spanakopita, Zesty Potato Skewers, Mini Risotto Cakes, Brussels Sprouts Sliders, Endive with Grapes, Hazelnuts and Roquefort, Hen of the Woods Mushroom Toasts, Spinach and Artichoke Dip, Provencal Goat Cheese Gratin, White Bean Dip with Roasted Garlic, Butternut Squash, Beet and Apple Skewers, or a Cheeseboard (method here).  My new Whipped Goat Cheese Dip would also be great!

Wednesday (New Year’s Day): We always made lentils on New Year’s Day for good luck. I usually continue this tradition with a big pot of lentil soup, but the Lentil Shepherd’s Pie (which we now make every year on Christmas) is outstanding.

Thursday: Ground Turkey Butternut Squash Skillet from Garden in the Kitchen with Fall/Winter Tabbouleh

Friday: Seared Scallops from Quicker Than Quick, Roasted Brussels Sprouts, Red Onion, and Grapes, Roasted Vegetables with Mint-Salsa Verde and Pomegranate Seeds

Saturday brunch: Sprouted french toast casserole with fruit

Sunday: Everyday Turmeric Chicken, Parsnip Puree, sweet potato fries

I have LOVED seeing all your creations of my recipes on Instagram. If you make any of my recipes, please tag me @pamelasalzman #pamelasalzman so I can check them out! I have a free Monday newsletter with my thoughts, new recipes, and things I’m loving lately. Subscribe here!

I come from a large Italian-American family with 28 first cousins (on one side of the family!) where sit-down holiday dinners for 85 people are the norm (how, you might ask – organization! But more on that later …).

Some of my fondest memories are of simple family gatherings, both large and small, with long tables of bowls and platters piled high, the laughter of my cousins echoing and the comfort of tradition warming my soul.
