Dinner Planner – Week of February 21, 2022

It’s Modernism Week in Palm Springs and I am back for the first time since 2020!  We are staying in Palm Desert and you know Hubs bought all sorts of tickets to lectures and home tours. I’m here for the sunshine and relaxation!

Friends, I am in production right now for a brand-new bootcamp for new and beginner cooks, called Back-to-Basics.  I took all your feedback + my experience as a cooking instructor for the last 14 years and I created an amazing course for you!  Be on the lookout for sign-ups in the next week or so.  I plan to launch the course the week of March 7th! Here’s your dinner planner for the week: Continue reading

Crispy Baked Tofu Recipe

I taught this basic oven-baked crispy tofu in a class a million years ago and refer to it all the time. I also put a chipotle version of it in my cookbook, Quicker Than Quick. Then I posted a reel on Instagram, but not everyone is on Instagram so I need a permanent home for this recipe where everyone can find it.  And here we are!

Dinner Planner – Week of February 14, 2022

Let me get right to it – if you need Super Bowl ideas, go to LAST week’s dinner planner. I used to suggest what to do with your Super Bowl leftovers for the day after, but this year the day after is Valentine’s Day. In as much as I would love to turn my leftover salsa and and slow cooker chicken tacos into a soup and my crudites into a chopped salad, my family is expecting something “special.” Of course those leftovers can wait until Tuesday! Here’s your dinner planner for the week:

Mini Taco Stuffed Potatoes Recipe

This recipe is not a recipe and more an idea that I hope you can take for inspiration without needing a recipe.  I hope that makes sense! We are not having a Super Bowl party inasmuch as a mini Super Bowl gathering with a few friends. The big news is that my daughter Emma will be visiting from Dallas and I could not be more excited! Dinner Planner – Week of February 7, 2022

Last chance to join two game-changing bootcamps!  Do check out Plant-Based 2.0 if you are looking to do a deeper dive into plant-based eating and cooking.  The plant-based diet is truly the best way to eat for most people. It doesn’t mean vegan and you don’t have to give up all animal products forever.  This is my favorite course I have ever created.  Please join me and other great members of my community.  There’s no time like the present to eat and cook for better health!  Please use the code YESPB2 for $100 off and I do have payment plan options!  The other course I am starting next week is Raising Healthy Eaters. I taught this once before and my email was flooded with success stories and gratitude after this course.  Believe me, I have been there and I have also come out the other end with three healthy eaters. If you are struggling, join me next week.  You will be in good hands.  🙂 Use the code KIDS100 for $100 off the course!

Besides being really excited to see many of you in my bootcamps this week, I am also excited about the Super Bowl and ALL. THE. SNACKS.  Here’s your dinner planner for the week:

Dinner Planner – Week of January 31st, 2022

Brrrrrrr!!!!!  It’s cold EVERYWHERE except where I live in southern California and also the tip of southern Florida.  Hoping you stay safe and warm, wherever you are.  Whatever you choose to eat, focus on warming foods, not cooling foods.  In a nutshell, eat what is in season, eat warm and hot foods, not cold, raw foods.  Cooked vegetables, soups and stews, lean proteins are all good.  Summer fruits, raw salads, cold smoothies and drinks are all going to cool you down.

Some news! I am repeating my Plant-based 2.0 (my more advanced plant-based course and my favorite of all my bootcamps) and my very successful Raising Healthy Eaters course both beginning the week of February 7th!  I will not be repeating these until the fall, if at all in 2022, so take advantage now if you have any interest at all.  You will not be disappointed in either bootcamp!  Please click on the links above to learn more.  As always, for my community members, I offer a discount and there are also payment plans available. For $100 off the bootcamps, use the code YESPB2 for the Plant-based 2.0 course and KIDS100 for the Healthy Eaters course.  Here’s your dinner planner for the week: Continue reading

Thai Coconut Chicken Soup Recipe

This was originally published in January 2014, but I have been making it again on the regular and thought the website needed updated photos!

You know what is just the worst?  Getting sick.  Life is great until you feel horrible.  I think most of us run around like maniacs until we’re so wiped out while our poor bodies are trying to tell us to slooooooow down and get some rest.  First it’s a little whisper like feeling so tired.  But we don’t listen.  Then we get a sore throat.  We don’t listen.  Then our bodies have to whack us over the head with a crazy cold and body aches until we have no other choice but to stay in bed.  A friend of mine who came down with a bad cold said to me the other day,”If I just spent a little time in bed resting when I wasn’t sick, maybe I would have stayed healthy!”  I think she’s onto something.Continue reading
