It’s October already!  Online cooking class subscribers, the new October cooking class is great and will be uploaded early this week.  Lots of great tips and info + really versatile recipes.  My goal this month is to not eat the apple cider-pumpkin bundt cake more than once a week!

I am in Dallas this weekend.  I taught a cooking class at my friend Lisa’s house and I am visiting my daughters the rest of the weekend.  We always have the best time.  Next week I will be on Hallmark’s Home & Family Tuesday morning.  And then in between a few cooking classes, it’s Jewish holiday time!  I am hosting the break fast once again.  I make a lot of food since most people will have fasted all day.  I’m going to try to get a lot done on Monday evening after dinner.  Anyone else hosting?  What are you making?

Here’s your dinner planner for the week:

Meatless Monday: Baked potato night with a great topping bar

Kol Nidre (Day before Yom Kippur): Brisket, shredded sweet potatoes and apple, honey lemon green beans, green salad with everyday salad dressing #2

Yom Kippur Break Fast: Spanakopita, frittata, spinach and quinoa salad with feta, broccoli crunch salad, tuna salad, chicken soup, noodle kugel (my mother-in-law’s recipe – not healthy LOL)

Thursday: Leftovers from the day before or roasted fish with chermoula and Moroccan roasted carrots (these would also be good for Kol Nidre)

Friday: Harira

Saturday brunch: Savory dutch baby pancake with spinach and gruyere

Sunday: Oven baked gigantes beans with tomato, dill, and feta, with either a nice piece of fish or go vegetarian with some simple cauliflower steaks

Here’s what you can do ahead if you need to:

Sunday:

Wash greens and vegetables

Make salad dressing and chermoula

Make chickpeas for harira (or buy them precooked)

Friday

Soak gigante beans

Make tomato sauce

Saturday

Cook gigante beans
