Meatless Monday: mixed greens with green beans, almonds, and dried cherry vinaigrette + I’m going to add quinoa and feta and double the dressing so this can be a whole meal

Tuesday: tomato tart, shawarma broccoli (If you need something more, a frittata or piece of fish would be perfect.)

Wednesday: Sumac spiced chickenjeweled rice (there are some veggies in the rice, but if you have time, roast some cauliflower to go with)

Thursday: Black bean and pumpkin soup, corn muffins(cornbread recipe in muffin tin)

Friday: Miso glazed black cod, pea and mushroom sauté, black rice

Saturday brunch: Savory oats with kale, mushrooms and walnuts, add a poached egg if you want more protein.

Sunday: Cauliflower Tikka Masala from Quicker than Quick served with steamed rice or try store-bought naan if that would encourage your kids to try it, plus chopped cashews to add a little protein (if you need more, serve with a simple piece of fish or stir cooked lentils into the masala sauce.). Here’s what you can do ahead if it helps you:

Sunday:

Wash greens

Blanch green beans

Make cherry vinaigrette

Cook quinoa

Measure dry mix for corn muffins

Monday:

You can make the tomato tart and serve room temp or reheat the next day

Tuesday:

Skewer chicken with vegetables

Cook black beans if making from scratch

Thursday:

Wipe mushrooms clean with a damp paper towel

Wash and strip kale

Cook black rice and reheat the next day
