At this time last year, I was perfecting my Thanksgiving menu for November and getting physically ready for the most taxing month of the year for me.  In the first three weeks of November, I typically teach FIVE in-person classes a week.  FIVE.  It was Thanksgiving, after all.   People needed a refresher, or a pep talk, or a tutorial on how to get it all done with NO STRESS.  Does anyone need more stress right now? I don’t think I could handle it.  Not even a little.

Here’s your dinner planner for the week:

Meatless Monday: Zucchini-leek soup p. 96 from Quicker than Quick, corn muffins (cornbread recipe in muffin tin)

Tuesday: Mejadra rice and lentils, shawarma roasted broccoli

Wednesday: spice rubbed wild salmon, Moroccan roasted carrots, sauteed greens (like Swiss chard)

Thursday: mixed greens with green beans, almonds, and dried cherry vinaigrette + I’m going to add quinoa and feta and double the dressing so this can be a whole meal

Friday: Sumac spiced chicken without pomegranate glaze if you use pomegranate seeds in the rice, jeweled rice (there are some veggies in the rice, but if you have time, roast some cauliflower to go with)

Saturday brunch: grain-free sweet potato pancakes, sauteed apples

Sunday: turkey meatballs with pasta or roasted spaghetti squash – method here, sauteed garlic spinach

 

Here’s what you can do ahead if it helps you:

Sunday:

Make stock

Cook quinoa for cornbread, if using

Cut broccoli into florets

Make broccoli yogurt mix

Wash salad greens

Wednesday:

Make dried cherry vinaigrette

Blanch green beans

Friday:

Roast sweet potato for pancakes
