Happy weekend! Do not forget to set your clocks ahead Saturday night (tonight!) I do love the extra light at the end of the day but it takes me a day or two to adjust. Looking ahead, next Sunday is St. Patrick’s Day, a HUGE opportunity to feed your family naturally green food and not get eye rolls!

Meatless Monday: Miso Soup Bar and veggie potstickers from Trader Joe’s to make things fun and EASY
Tuesday: One Pan Chicken and Coconut Rice with Cashews, Mango, and Spinach from Amanda Frederickson (the ingredients in the recipe is missing the quantity of mango, but I’m assuming it’s 1 mango, chopped.)
Wednesday: Cabbage Cacio e Pepe + a protein of your choice (a side of baked fish or grilled chicken…or mix in some chickpea pasta with the cabbage).
Thursday: Roasted spaghetti squash with pesto and shrimp, arugula salad with everyday salad dressing #1. I’ll saute the shrimp in a skillet with olive oil, garlic and crushed red pepper, which takes a few minutes on each side.
Friday: Parchment baked halibut with cilantro and ginger, broccoli sautéd in garlic (blanch in salted boiling water for 3 minutes, drain, pat dry and saute in olive oil, lots of chopped garlic and a pinch of crushed red pepper.) Add cooked rice if you need more.
Saturday Brunch: Green pancakes in the spirit of St. Patrick’s weekend! Feel free to add some protein powder or collagen for extra protein!
Sunday (St. Patrick’s Day): You can make an array of yummy “green” things for St. Patrick’s Day without using food coloring. We will most likely make split pea soup and Irish soda bread, (or my Irish soda bread-style muffins from Instagram using Straus Family Creamery’s Kefir) plus the Colcannon with Cauliflower and Kale is also great. Other green food you could try: green breakfast cookies, green muffins (these have been around the world and back!), green matcha chia pudding, “leprechaun juice” smoothie, vegan mint chip smoothie, green spinach risotto, asparagus or broccoli soup, one pot barley with melted cabbage from my cookbook or any recipe using a green vegetable such as minted sugar snap peas, Brussels sprouts, broccoli, cabbage or spinach
