Happy New Year one and all!  I am rounding out 2021 in Utah and hope to make it back to Manhattan Beach quickety quick.  I have lots of plans for this community in 2022 including new bootcamps, new cooking classes and more.  I appreciate each and every one of you and your interest in health, good food, cooking from scratch and living your best life.  I am here for it and humbled to be part of your journey.  Here’s to more goodness in the kitchen in the new year!  Here’s your dinner planner for the week:

Meatless Monday: Shirataki noodle stir fry – try this recipe. You can treat them like pasta and add whatever you want.

Tuesday: Weeknight cassoulet, roasted cabbage

Wednesday: Curried lentil, tomato and coconut soup

Thursday: Mediterranean skillet chicken and rice, add a salad or a sauteed vegetable on the side, like kale or spinach.

Friday: One Pan Pizza Broccoli in the Washington Post, by Dawn Perry, add some roasted shrimp or some meatballs if you want more protein or some toasted baguette to act like a pizza crust!

Saturday brunch: chickpea “tuna salad” served with butter lettuce leaves, sprouts and avocado

Sunday: Chicken enchiladas rojas, Mexican sauteed greens

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Wash greens and vegetables

Make stock

Measure spice mixture for chicken skillet and rice

Cook white beans if making from scratch

Make breadcrumb topping for cassoulet

Monday: 

Chop onion and carrots for cassoulet

Wednesday: 

Season chicken for skillet dish

Thursday: 

Cook chickpeas if making from scratch

Friday: 

Make enchilada sauce if making from scratch
