Here’s your dinner planner for the week:

Meatless Monday: Buddha bowls with Moroccan Spiced Squash (p. 141)  from  KM served with sautéed kale, quinoa, toasted slivered almonds and lemon. You can drizzle tahini dressing on top (use this method)

Tuesday: Baked Asian Turkey Meatballs, black rice (aka forbidden rice) and Asian slaw.

Wednesday: Chickpea Socca with Mediterranean Salad.  You can also skip the feta if you want and drizzle tzatziki on top, method here.

Thursday:  Lemony chickpea soup (this is such a quick and easy soup), Spring salad with oranges, radish, avocado and pumpkin seed brittle (I’m probably going to skip the brittle for a weeknight.

Friday:Wild halibut with Thai coconut sauce served with basic rice and sautéed greens (the sauce is so good, you may want to double it!) I’m going to make extra greens for the naan pizzas on Saturday.

Saturday brunch: naan pizzas with leftover sauteed greens (or any leftover veggies you have from the week) and topped with homeade vegan ricotta cheese

Sunday: slow cooker whole chicken or smoky braised lentils (without turkey sausage) If you want a plant-based option, puree of broccoli

 

Here’s what you can do ahead if it helps you:

Sunday:

Wash greens

Cook quinoa

Cook black rice

Roast squash

Make tahini dressing

Make tzatziki, if using

Monday:

Make turkey meatball mixture

Wednesday:

Make stock

Cook chickpeas, if making from scratch

Thursday:

Make vegan ricotta
