In the meantime, let’s get organized now for the week ahead so we have time to devote to other things! Here’s your dinner planner for the week:
Meatless Monday: Moroccan vegetable soup
Tuesday: Lickity split chicken from my cookbook and spinach risotto (feel free to add in a side veggie if you need it)
Wednesday: Roasted sweet potatoes and leeks with warm garlic dressing and a “clean out your fridge” frittata (use this recipe for a guide)
Thursday: Red Thai curry with salmon and vegetables by Mom’s Kithchen Handbook
Friday: Asian turkey lettuce cups, ginger-honey carrots
Saturday Lunch: Immune boosting soup (everyone is loving this! Add in last night’s leftover turkey and/or carrots if you like.)
Sunday: Chicken enchiladas rojas and Mexican sauteed greens
Here’s what you can do ahead if you need to:
Sunday
Wash/dry greens (separate your butter lettuce for lettuce cups) and herbs
Make chicken or vegetable stock
Cook chickpeas from scratch, if you aren’t buying canned
Rice cauliflower, if you aren’t buying pre-riced
Monday
Season your chicken (with all the spices and herbs and salt) and refrigerate
Roast garlic and store in fridge, you can even make the dressing ahead of time if you want. If you want the dressing to be “warm” as stated in the recipe, you can reheat the dressing very gently over super low heat in a saucepan on the stove before drizzling the veggies.
Friday
Make enchilada sauce and poach chicken
