So, what’s new?  Absolutely nothing, right?  Same here.  What are you up to this weekend?  Yep, me too.  If you take my monthly online classes, I am doing a Facebook Live tomorrow morning (Saturday 7/18) at 9:30 am PT.  Let’s chat about nothing or food or whatever you want.  Can’t wait!!!  In the meantime, here’s your dinner planner for the week (from now until September all dinner planners will be heavy on the tomatoes):

Meatless Monday: grilled panzanella with green gazpacho from cooking light

Tuesday: zucchini and corn with jalapeño, feta and basil, spiced halibut and lime skewers

Wednesday: Green goddess salad, fajitas, Mexican black beans

Thursday: Pasta alla checca, mixed green salad with white beans or chickpeas

Friday: Italian potato salad, whole roast chicken (slow cooker option here)

Saturday brunch: Tuna “ceviche” with avocado p.255 from Quicker than Quick served with tortilla chips or plantain chips, watermelon aqua fresca

Sunday: Chicken and vegetable kabobs with chimichurri, peach salad with chili and lime

 

Here’s what you can do ahead if it helps you:

Sunday:

Make panzanella vinaigrette and green goddess dressing

Make green gazpacho

Make spice mixture for halibut skewers

Wash greens

Tuesday:

Marinate meat for fajitas

Slice peppers and onions

Thursday:

Blanch green beans

Friday:

Make watermelon agua fresca
