Happy weekend! I don’t know about you, but it really starting to feel like fall and I am loving all the autumnal produce in the markets! Here’s your dinner planner for the week:
Meatless Monday: butternut squash lasagne
Tuesday: Fesenjan-style chicken stew with walnut and pomegranate sauce, any cooked grain or cauliflower rice, sauteed greens like kale or Swiss chard
Wednesday: Turkey sausages with cabbage and fennel (this is a one dish meal IMO, but you can add roasted potatoes if you need something more.)
Thursday: shrimp with tomatoes, white beans and spinach (we love this with rice or garlic bread)
Friday: vegan lentil shepherd’s pie, fresh side salad
Saturday brunch: mushroom and leek quiche with sweet potato crust
Sunday: Baked Asian turkey meatballs in lettuce cups, shaved veggies (carrot, beets, radish) with creamy miso ginger dressing
Here’s what you can do in advance if it helps you:
Make cashew-cauliflower ricotta or use store bought
Assemble butternut squash lasagne. You can also bake it and reheat the next day.
Make stew and reheat the next day
Chop vegetables for shepherd’s pie
Pre-bake sweet potato crust
Make meatball mixture
