Happy weekend! I have barely recovered from this week’s holidays. I had 22 people for the break fast on Wednesday night and then I had to leave early the next morning to teach a class. Remind me not to do that again! 😉 If you take my online cooking classes, I am doing a Facebook LIVE Saturday (October 12) morning at 9:30 am PST. If you take my classes aand want to join the private FB group, you have to answer the questions! I hope to connect with many of you Saturday morning. The theme is AMA – ask me anything! Here’s your dinner planner for the week:
Meatless Monday: Mejadra rice with lentils, fresh side salad
Wednesday: Black bean and pumpkin soup
Thursday: Roasted in-season wild fish, chopped salad with quinoa, sweet potatoes and apples from Sprouted Kitchen
Saturday brunch: Quinoa granola with yogurt and fresh fruit
Sunday: Slow cooker Italian Pot Roast from my cookbook, serve with a fresh green salad
Here’s what you can do ahead if you need to:
Wash greens and vegetables
Make salad dressing
Make quinoa granola and store in the freezer
Soak and cook black beans or use canned beans instead
Roast sweet potatoes for salad
Peel and cut parsnips into sticks
