Happy Weekend!  I am visiting my mom this weekend on Long Island where we will be attending a conference honoring my father and the work he did on behalf of the Italian community. I’m sure it will be a beautiful tribute to my father, whom we miss very much every day.

Here’s your dinner planner for the week:

Meatless Monday: egg-less spring vegetable frittata (but I’m going to use mushrooms, leeks and kale or spinach)

Tuesday: Chicken tikka masala, basmati rice with peas, sautéed spinach

Wednesday: Sweet potato and quinoa veggie burgers p. 209 from KMparsnip fries, fresh green salad

Thursday: Deconstructed stuffed cabbage casserole, serve a salad on the side if you need more (you can swap cooked lentils for the meat to make this vegetarian).

Friday: Cod acqua pazza (great one-dish meal!)

Saturday brunch: Green goddess quesadillas p. 127 from Quicker than Quick

Sunday: Moroccan chicken with dates, served with steamed white rice or couscous


Here’s what you can do ahead if it helps you: 


Cook vegetables for frittata. You can also blend tofu mixture for frittata and refrigerate. 

Cook quinoa

Wash greens


Marinate chicken

Make Tikka Masala sauce

Roast sweet potatoes 


Assemble sweet potato patties


Blanch cabbage leaves
