Instagram Live on Monday will be with my friend Chrissy Roth, whom I dub “Plant-based Chrissy.” We’ve done lives together before and I’m excited to have her step in for Hubs on Monday. If you take my monthly online class, your all-new May class was uploaded last week and I’ve been getting great feedback already, so make sure you watch! It’s a breakfast/brunch theme and there’s lots of great info as well as 5 all-new recipes! Get your questions ready, because our monthly zoom is on Tuesday, May 24th at 5:00 pm PST. You can also submit any questions to me beforehand and I can answer them during the live and then you can watch the recording! Here’s your dinner planner for the week:
Meatless Monday: Eggplant meatballs on roasted spaghetti squash (see this recipe for how to roast spaghetti squash), sauteed spinach with garlic
Tuesday: salad with miso-ginger dressing, parchment baked halibut with cilantro and ginger
Wednesday: Greek sheet pan chicken, roasted broccoli
Thursday: shirataki noodle and vegetable stir-fry with crispy tofu
Friday: Chicken kabobs with chimichurri, roasted zucchini and red onions (400 degrees with ghee or olive oil about 15-20 minutes or until golden brown)
Saturday brunch: 7 layer salad with blue cheese dressing (this is such a fun entertaining salad, but even if you don’t do a layered salad, the dressing is fabulous!!)
Sunday: tex-mex stuffed sweet potato skins , green salad and/or grilled asparagus
Here’s what you can do in advance if it helps you:
Sunday:
Make eggplant meatball mixture
Roast spaghetti squash
Wash greens
Make salad dressing
Tuesday:
Marinate chicken for Greek sheet pan
Wednesday:
Press tofu and toss in marinade
Thursday:
Make chimichurri sauce
