Happy Spring!  Spring represents a new beginning, a rebirth, a fresh start.  Better weather is around the corner. And spring produce is cleansing and detoxifying (think wild greens, herbs, strawberries and asparagus.) Spring makes me feel like, We did it!  We survived the holiday season and the winter.  Things can only get better from here. Let’s hope, yes?

I have decided not to resume in-person classes for the remainder of 2022. There are a few reasons for that, but the main reason is that I teach in other people’s kitchens and we used to pack people in.  I just don’t think that’s a viable model for the times we live in right now.  So, if you like learning from me, my monthly cooking class is fabulous!!  Do check it out. I will also be offering all my bootcamps soon for you to take on your own time, self-paced.  Look out for that!

Here’s your dinner planner for the week: 

Meatless Monday: Baked falafel  with your favorite accompaniments like avocado slices, pickled onions, tahini sauce, lettuce wraps or pita.  You can also pan-saute the falafel if you want to cook them faster.  It might sound odd, but creamy cabbage and avocado slaw goes great with falafel!

Tuesday: South American Roast Chicken with Green Sauce from Kitchen Matters, (my favorite chicken recipe ever and the best sauce ever) Solterito (peruvian chopped salad – I’ll sub diced potatoes for the corn)

Wednesday: Wild Salmon Burgers, Mediterranean quinoa salad

Thursday: Harissa Lentils with Roasted Veggies and Yogurt from Kale and Caramel

Friday: Sweet potato and black bean tacos served with jicama slaw or salad

Saturday brunch: Spinach Pizza Quesadillas with a fresh side salad using your favorite organic greens or Greek nachos (p. 65) from KM 

Sunday: Curried Turkey and Vegetable Stir Fry from Quicker than Quick served with steamed rice

 

Here’s what you can do ahead of time if it helps you: 

Sunday: 

Assemble falafels

Make pickled onions

Make tahini sauce

Wash greens

Make marinade for chicken

Cook quinoa

Tuesday: 

Marinate chicken

Thursday: 

Make beans if cooking from scratch
