Here’s your dinner planner for the week:

Meatless Monday: Chickpea burgers, grated carrot salad

Tuesday: grilled halibut with watermelon pico de gallo, farro with golden beets, cucumber, feta and mint vinaigrette

Wednesday: Chili-sesame kelp noodles with veggies p. 163 from Quicker than Quick

Thursday: Shrimp and basil stir fry, black rice, grilled eggplant

Friday: Italian potato salad, whole roast chicken (slow cooker option here)

Saturday brunch: lemon-ricotta blueberry soufflé

Sunday: risotto stuffed tomatoes, green salad with olives, roasted red peppers, pepperoncini, pickled onions, and everyday salad dressing #2 – if you need protein, add white beans or cooked lentils to the salad or my new favorite – canned sardines!


Here’s what you can do in advance if it helps you: 


Assemble chickpea burgers

Roast beets

Cook farro and make dressing


Cook black rice


Cook potatoes

Blanch green beans


Make blueberry souffle
