Happy weekend!  For my monthly online cooking class subscribers, get your questions ready – I’ll be doing our live monthly Q&A via zoom on Tuesday at 5:00 pm PT.  For anyone curious about the monthly cooking class, I teach a brand new menu with 5 recipes each month.  The class is prerecorded and edited and you can watch on your own time.  I have a live zoom Q&A session for questions every month, plus there is an optional private Facebook page to interact with me and other students.  I am not teaching any in-person classes, friends, so this is IT + my bootcamps. I have provided a new option for monthly students which I call an All-Access Pass and while you are an active subscriber, you have access to the entire library of classes and recipes.  That is several years worth!  Teaching is my business, so if you want to learn how to be a better, more healthful cook, you’ll be in good hands.  Here’s your dinner planner for the week:

Meatless Monday: Smoky braised lentils with turkey sausage (leave out for vegan), broccolini with garlic and crushed red pepper (blanch broccolini for 3 minutes in salted boiling water; drain; saute garlic and chili, then add broccolini, salt and pepper)

Tuesday: Shrimp and basil stir fry, roasted veggies, served with steamed white or brown rice or a riced veggie like cauliflower or broccoli stems

Wednesday: Tandoori Chicken (I’ll make this with breasts and drumsticks), apricot couscous (or plain steamed couscous), sautéed Swiss chard

Thursday: fish (cod or halibut) sticks with tartar sauce (I’m going to use this recipe minus the parmesan and I’m going to add a little lemon zest), potato coins, green salad with everyday salad dressing #2

Friday: steak and mushrooms in ginger-miso broth from Williams-Sonoma, Trader Joe’s frozen potstickers, edamame

Saturday brunch: Gluten-Free Raisin Bran Muffins with Greek yogurt and orange slices

Sunday: orange-rosemary glazed chicken (would work with tofu), with millet cauliflower mash or  cauliflower mashed potatoes, roasted carrots (see this post for how to roast carrots  — you don’t have to make the yogurt sauce)

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Cook lentils

Make shrimp marinade

Wash greens

Make salad dressing

Thursday: 

Wipe mushrooms clean

Friday: 

Break cauliflower into florets for cauliflower mash

Make muffins

Saturday: 

Marinade chicken
