Thank you all for being patient with me while I update my website.  There are still changes to be made to make it more user-friendly.  I knew that once it was launched, we would still be tweaking it.  Has anyone noticed that everything takes longer to execute/complete than it used to??  Here’s your dinner planner for the week:

Meatless Monday: Lentil Sloppy Joes from KM. If you want to omit the buns, serve it over cauli-rice, method here, or millet.

Tuesday: slow roasted salmon – use this method and butternut squash salad with pomegranates and toasted pumpkin seeds

Wednesday: One pot farro primavera served with sautéed Swiss chard

Thursday: Quicker chicken marbella p. 212 and white bean puree with garlic and sage p. 189 from QTQ

Friday:  Lasagna Cupcakes (feel free to add ground meat or a meat substitute), served with organic broccolini sautéed with thinly sliced garlic.

Saturday brunch: hashbrown casserole

Sunday: slow cooker Italian pot roast from my cookbook, cauliflower mashed potatoes, roasted green beans
