I just taught my last scheduled class on Thursday until September so I can focus on my book and a project I am working on for Clean Eating Magazine. I sent out an email to my subscribers with details about my upcoming book events, but here are a few with some more pending. I’m working on a permanent events page for the blog, as well. I hope to see you in person this summer!

Monday: Black bean veggie burgers with smoky red pepper sauce, creamy avocado slaw
Tuesday: Salmon sushi bowl
Wednesday: kibbeh kebabs, tomato and cucumber salad, garlic yogurt, pita
Thursday: Pizza Zucchini Boats with ground turkey added to the marinara, chopped green salad with romaine, radicchio, pepperoncini, cherry tomatoes
Friday: spiced halibut skewers, deconstructed guacamole salad
Saturday: summer garden frittata, avocado toast
Sunday: Udon with Chicken and Garlicky Peanut Dressing from bon appétit, sesame spinach salad
Here’s what you can do ahead if you need to:
Sunday
Prep and make black bean burgers
Make red pepper sauce
Shred cabbage for slaw
Dice pepper or shred carrot for slaw
Juice limes for slaw and guacamole salad
Julienne cucumber, radish, cabbage and/or carrot for sushi bowls, if using
Wash romaine lettuce and raddichio for salad
Make spice mixture for halibut skewers
Make sesame spinach salad dressing
Make garlicky peanut dressing for udon noodles
Tuesday
Make the meat mixture for kibbeh kebabs
Make the garlic yogurt sauce
Wednesday
Make homemade marinara sauce and add ground turkey (if not using jarred sauce)
Slice pepperoncini
Thursday
Cut up halibut, if not already cut
