It’s nice to be home this weekend before I take off again. I’m catching up on emails, snail mail and shooting some recipes for the blog.  I do have some fun upcoming events and such that I can tell you about:

Monday, June 26th Set your DVR’s for my Hallmark Home & Family appearance!  That show is tons of fun.  I am making the wild halibut burgers from my cookbook.  Please check your local listings for times.  On the west coast, the show airs at 10:00 am.

Tuesday, June 27th I am chatting live with the always fabulous Kathy Kaehler and Catherine Grace O’Connell on LA Talk Radio CH 1,   11:00 am PST/2:00 pm EST

Wednesday, June 28th  Hi, Seattle!!  Come meet me at Book Larder at 6:30 pm for mingling, chatting and snacks!  Free, but please RSVP to Book Larder. I am also taping a tv segment at KOMO which will run on Thursday morning.

Thursday, June 29th  Hi, Portland! I am excited to appear on KATU “Afternoon Live” at 4:00 pm.

Friday, June 30th I am doing a segment with KATU “AM Northwest” at 9:00 am.  And then I am teaching a cooking class at Bob’s Red Mill from 6:00 – 8:00 pm.  $25 Please RSVP to Bob’s Red Mill.  So excited!

But we’ve still got to eat!  Here’s your dinner planner for the week:

Meatless Monday: risotto-stuffed tomatoes, green salad with everyday salad dressing #1

Tuesday: Sesame shrimp with smashed cucumber salad from Cooking Light Magazine, brown rice or cauli-rice

Wednesday: Kibbeh kebobs, pita or lettuce leaves, tahini sauce, fattoush salad

Thursday: Slow cooker whole roast chicken with greek herbs (I’m going to mix dried oregano and thyme.  Dried mint would be nice, too) and green bean salad with fennel and olives

Friday: Maple-soy baked salmon from my cookbook(It’s in the section “How to Cook Wild Salmon 7 Ways”), grilled asparagus, cole slaw or Asian slaw

Saturday lunch: Quinoa tabbouleh

Sunday: Spaghetti squash (here’s a recipe to show you how to cook spaghetti squash) with pesto and quick-sauteed tomatoes

Here’s what you can do ahead of time if you need to:

Sunday

Make risotto

Wash greens for salad, wash lettuce for kibbeh meal

Make all salad dressings

Rice cauliflower if using

Tuesday

Salt chicken

Wednesday

Prep green beans

Prep cabbage for slaw

Prep asparagus

Saturday

Cook spaghetti squash
