A lot happening this week!ย  Monday, Hubs and I should be able to do our regular IG Live at 5 pm. We are a house divided for Monday Night Football since it’s my NY Giants v his Pittsburgh Steelers!ย  It is Halloween on Thursday and it also marks 4 weeks until Thanksgiving.ย  It is GO time!ย  On Friday, I plan to upload the new November/Thanksgiving class if you take my monthly classes.ย

Meatless Monday:ย Sweet Potato and Black Bean Tacos,ย jicama slawTuesday:ย Crispy Rice Salad from Dishing Out Health with Creamy Miso-Ginger Dressing topped with simply roasted salmonย Wednesday: Shrimp with tomatoes, white beans and spinachย (we love this with rice or garlic bread)ย +ย Bell Pepper Jack oโ€™ Lanternsย (such a cute night before Halloween addition)Thursday:ย Turkey chiliย (to make this plant based: swap out turkey for an equal weight ofย cookedย beans orย cookedย lentils) + topping bar andย cornbreadย andย Roasted Stuffed Fondue PumpkinFriday:ย Sumac spiced chicken,ย jeweled riceย (there are some veggies in the rice, but if you have time, roast some cauliflower to go with) Ok, this rice is more involved than the typical side dish, but itโ€™s GORGEOUS and delicious!Saturday brunch:ย Savory dutch baby pancake with spinach and gruyereSunday:ย Roasted cauliflower steaksย served withย roasted Brussels sprouts, red onion, and grapes (good recipe for Thanksgiving, too!),ย slow cooker chicken
