Such a wonderful treat – my mom is visiting me for a week!  She will be my special guest on my Monday night live at 5 which also happens to be my birthday.  I am planning to make one of my favorite recipes of all time, the Herbed Sweet and Spicy Wild Salmon from Quicker Than Quick.  I am using the Copper River Salmon I brought home from my trip to Alaska in August.

In other news, my website will be undergoing a major facelift in the next couple weeks.  It will be easier to find classes; bootcamps will be available for purchase to follow on your own time; I will have a shopping page with all my favorite things and a page with discount codes for lots of products.  Very exciting!  Also, I am likely repeating my Entertaining with Ease bootcamp in November if you’d like to take that with me live! Stay tuned for sign-ups!  Here’s your dinner planner for the week:

Meatless Monday: Herbed sweet and spicy wild salmon p. 247 from QTQ

Tuesday: beef bulgogi lettuce wraps from whatsgabycooking, serve with rice or asian noodle salad

Wednesday: Braised greens and beans with roasted delicata squash (see this recipe or this recipe for how to roast) or garlic toast

Thursday: balsamic roasted broccoli and cherry tomatoes, grilled chicken paillard

Friday: Cauliflower and roasted garlic soup , sourdough toast with almond milk cream cheese and sauteed mushrooms

Saturday brunch: Baked pumpkin oatmeal, served with fresh fruit and full fat greek yogurt or non-dairy yogurt

Sunday (Halloween): Turkey chili (to make this plant based: swap out turkey for an equal weight of cooked beans or cooked lentils) + topping bar and cornbread,

 

Here’s what you can do in advance if it helps you:

Sunday:

Wash herbs and greens

Make salad dressing

Cook beans if making from scratch

Monday:

Cut delicata squash

Shred cabbage

Wednesday:

Cut broccoli and cauliflower into florets

Thursday:

Roast garlic

  1. I used boneless chicken thighs cause we like dark meat. So smaller portions but most definitely a keeper.
