Meatless Monday: Sugar snap pea and quinoa salad with tofu (I will replace snap peas with cauliflower or another fall/winter vegetable), I might add a quick saute of veggies if I think we need it
Tuesday: Deconstructed stuffed cabbage casserole, serve a salad on the side if you need more (you can swap lentils for the meat to make this vegetarian).
Wednesday: Lemony chickpea soup, arugula salad with persimmons, beets and burrata
Thursday: Easy Chinese chicken, steamed rice, blanched or roasted broccoli
Friday: Pizza night! Here’s my homemade pizza dough recipe. I cook the pizzas on a preheated pizza stone in my oven at the highest temperature my oven will go which is 500 convection!
Saturday brunch: Green goddess quesadillas p. 127 from Quicker than Quick
Sunday: Mediterranean fish stew
Here’s what you can do in advance if it helps you:
Sunday:
Cook quinoa
Make dressing
Blanch cabbage leaves
Cook ground meat
Cook chickpeas if making from scratch
Monday:
Assemble cabbage casserole
Wednesday:
Cut broccoli into florets
Thursday:
Make pizza dough if making from scratch

Hi Pamela! I’ve been a fan of yours for so long but have been off IG. I have never meal planned before but forcing myself to start since I am a working mom with a toddler and newborn! I redound your blog this morning and it brought me so much joy because I love your recipes and forgot about your dinner planning posts!!
