Who is in Thanksgiving mode? Me me me!!  I am offering my November class for a 1-time purchase, as opposed to subscribing for a 3-month minimum.  The class video and recipes in the November 2021 class are all new and not even in the 2021 ebook (which has 13 more recipes than 2020.) Now is also a good time to test new recipes that you are thinking about making on Thanksgiving. ;). Here’s your dinner planner for the week:

Meatless Monday: Miso soup and veggie sushi rolls (you can add soooo many things, but I’m thinking roasted sweet potato, avocado and a spicy sriracha aioli

Tuesday: Roasted salmon (olive oil, salt and pepper at 400 degrees/8-10 minutes per inch of thickness) with roasted balsamic rutabagas, sautéed swiss chard (you can use this recipe and leave out the dried apricots and pine nuts, if you want)

Wednesday: Chicken and vegetable curry (I might make this vegan and sub chickpeas for the chicken), steamed brown rice

Thursday: Sheet pan shrimp with broccoli p. 261 from QTQ , black rice or riced vegetable of your choice

Friday: brussels sprouts with turkey bacon and dates (good recipe for Thanksgiving, too!) served with cauliflower steaks – use this method with lemon-tahini sauce

Saturday brunch: egg-less spring vegetable frittata (but I’m going to use mushrooms, leeks and kale or spinach)

Sunday: Baked chicken with artichokes and capers, millet-cauliflower mash

 

Here’s what you can do in advance if it helps you:

Sunday:

Roast sweet potato

Make spicy sriracha aioli

Wash greens

Cut rutabagas

Monday:

Cook chickpeas if using in curry and making from scratch

Tuesday:

Make the sauce for the shrimp

Cook brown rice

Wednesday:

Cut broccoli into florets

Thursday:

Trim brussels sprouts

Make lemon tahini sauce

Cut cauliflower into steaks

Friday:

Blend tofu-chickpea flour mixture for frittata.
