You know what time of year it is!  I am going to Long Island to hang with my family! Follow along on Instagram or Facebook as my sisters, my mom, my aunt and I cook up a storm, have long coffee talks in the morning, walk along the beach, sneak away from the kids on a canoe and play Rummikub until we’re blue in the face!  How do we manage to cook meals for so many people all week?  It’s called a GOOGLE DOC and we all help out, including the kiddos.  I repeat a lot of the same recipes year after year, because why not?! 

Also, I wanted to let you guys know about a great course my favorite organizing gurus, Inspired Everyday Living, are launching, called Declutter and Manifest Laura and Alison are more than just organizers. They really value the home as a reflection of who you are and the life you want to live.  I highly recommend this course!! 

Here’s your dinner planner for the week:

Meatless Monday: Green Gazpacho, depending on how hungry we are, I’ll serve a mixed green salad with chickpeas or another protein or a caprese salad.

Tuesday: Curried turkey and vegetable stir-fry p. 235  from QTQ served with rice or cauliflower rice

Wednesday: barley and corn tabbouleh, spiced halibut and lime skewers (I’ll add some zucchini to the skewers to get in my veggies)

Thursday: oven baked eggplant with olives, capers, and basil, with spinach and quinoa salad with feta and dill

Friday: Grilled summer salad with chicken and spicy cashew dressing(I’ve made this without the chicken many times.  Swap in crispy tofu, cooked white beans or frozen/defrosted peas.)

Saturday brunch: easy tuna dip spread on freshly toasted whole grain or gluten-free bread (more delicious than it looks, I swear!)

Sunday: slow cooker barbacoa tacos  or Mexican black beans, DIY salad bar for taco bowls

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Make green gazpacho

Wash greens

Monday: 

Cook barley

Cook quinoa

Make salad dressings
