If it’s hot where you are, this dinner planner may help give you ideas for cooking when you don’t feel like turning on the oven! I am thinking no-cook, grilling outside, and slow cooker (mine doesn’t add warmth to the kitchen like an oven.) If you take my monthly online cooking class, I am going live with you on Tuesday at 5:00 pm PT! It’s an opportunity for you to ask me anything at all and interact with other students. We always have a lively conversation and it has been fun getting to know many of you! If you like learning from me, you should absolutely sign up for my monthly class. No in-person classes anymore, so this is the next best thing! Here’s your dinner planner for the week:
Meatless Monday: Raw Tacos, refried beans, riced veggies (you can follow the steps for cauliflower rice here, but lots of vegetables work such as broccoli, zucchini, carrots and cabbage), guacamole
Tuesday: Greek Shrimp with Tomatoes and Feta, cooked rice, grilled vegetables
Wednesday: The best grilled flank steak with chimichurri sauce (see this recipe), grilled broccolini with parmesan breadcrumbs
Thursday: salmorejo and tortilla “pizza” (place a tortilla on a baking sheet and top like a pizza with or without cheese or use vegan soft cheese, bake at 400 until warmed through.) I like Siete Foods grain-free chickpea tortillas or Food For Life sprouted grain tortillas.
Friday: Fresh corn cakes with avocado salsa, slow cooker whole roast chicken
Saturday brunch: chickpea and deconstructed pesto salad
Sunday: Greek-style grilled chicken paillard, watermelon agua fresca
Here’s what you do can do in advance if it helps you:
Sunday:
Wash greens
Rice vegetables
Cook rice
Make marinade for steak
Make breadcrumbs for broccolini
Tuesday:
Make chimichurri sauce
Wednesday:
Make salmorejo
Thursday:
Season whole chicken
Measure dry mix for corn cakes
Friday:
Cook chickpeas if making from scratch
