I hope you all had a nice holiday week.  I was able to spend a few days in the warm and sunny desert eating my weight in grapefruits and tangerines!  I get a lot of emails and DMs asking me for my recommendations for the desert.  I wrote a Substack newsletter about a year and half ago with all my recs.  I can probably do a little updating on it, but it’s a pretty comprehensive list!  March online cooking class is coming soon and it’s GREAT!  I can’t wait until you see it!

Meatless Monday: Kung Pao Cauliflower served over quinoa + peanuts for extra protein 

Tuesday: Wild Salmon Patties + Mediterranean quinoa salad

Wednesday: Chicken Piccata from Salt & Lavender, Roasted fingerling potatoes with gremolata, sautรฉed spinach and green beans with garlic

Thursday: roasted chicken, celery root puree, Brussels sprout leaf salad

Friday: Curried Lentil, Tomato and Coconut Soup + pesto grilled cheese sandwiches 

Saturday brunch: Swiss chard frittata

Sunday: Coconut Fish and Tomato Bake, basic steamed rice, Ginger and honey-glazed carrots
