I just returned from a lovely trip to New York to visit my daughter, my mom, and the rest of my family, and my heart (and stomach!) is full. My sister and I had so much fun experimenting in the kitchen together—we even came up with an incredible new chicken recipe that I shared in my latest Substack post for paid subscribers. Meatless Monday: Braised greens and beans + Cornbread
Tuesday: Arroz Con Pollo from QTQ + I’ll sauté onions and peppers as a side dish for more veggies
Wednesday: blackened wild salmon tacos, southwestern quinoa salad
Thursday: Pan Seared Chicken with Mushroom Sauce from Joyful Healthy Eats, Cauliflower mashed potatoes, Smashed Parmesan Brussels Sprouts
Friday: Vegetable Paella + Seasonal Market Salad with Creamy Parmesan Ranch Dressing (I’ll add some chickpeas for extra protein)
Saturday brunch: Orange Juice-Cinnamon Overnight Oats with Cacao Nibs
Sunday: Chicken and vegetable kabobs with chimichurri sauce, Cilantro-Lime Rice, Grilled Caesar-ish Romaine Salads
