Pizza Dough Recipe

I’ve gone through many pizza phases in my life (I eat it often then I don’t and so on) and where I acknowledge that it is not a health food, I really do enjoy it.  Even if the dough is gluten-free or made with whole wheat flour, flour is flour and will spike your blood sugar.  So when I eat pizza, I don’t eat too much and I always supplement my meal with a salad.  I also tend to load up my pizzas with lots of veggies and I often use no cheese, opting instead for my homemade vegan mozzarella (recipe from my online class this spring), cashew-cauliflower ricotta, or the red pepper pesto from Quicker Than Quick.Continue reading

Here’s another recipe that was deep in my archives that I still absolutely love, but needed a photo makeover!  This is the time of year when I am furiously trying to maximize my consumption of all things summer.  The seasonal window for some of my favorite foods is just too short, especially tomatoes.  In my classes July through September, I always feature at least two recipes with the beloved tomato and I beg everyone to enjoy them while they last because fresh tomatoes won’t be appearing in my kitchen until the following summer.Continue reading

Market Salad with Avocado, Corn, Radishes and Lime Vinaigrette Recipe

This is my new salad of the season!  I have had friends over on several occasions over the last few weeks and I keep making this salad.  It’s BEYOND delicious!  Lime speaks to me.  I actually like it and use it more than lemon.  It reminds me of summer because my parents used to have epic summer parties in the backyard and my dad always served up gin and tonics with lots of lime.  I love lime in water with mint or fruit, with yogurt and fruit, on fish (ooooh, so good on fish!), on avocado toast, and of course with tequila!Continue reading
