Happy weekend!  We just had a really lovely Passover seder at our house.  You can see my menu from last week’s dinner planner.  My only change was to swap cauliflower mashed potatoes for the sweet potato casserole because we’re going to my in-laws’ house tomorrow for the second seder and my MIL is serving sweet potatoes.  You can also check out my instagram stories for a little behind the scenes.  In other news, if you didn’t see this from my last post, I just launched the first of my online classes!!  I would love to know what you think, so I am offering my first class at a very discounted rate of $7.  For more details, click here!  Here’s your dinner planner for the week:Continue reading

Mercury is in retrograde.  That’s what I was told is the reason that my week was INSANE!  I really felt like the energy in the universe was a little wonky this week.  Saturday I am off to NY to see my family for a bit and then do a little work.  Check my Instagram and FB page for confirmation, but I’ll be popping into The Feed Feed’s offices on Tuesday for an Instagram Live around 11:00 am EST.  Then at the Institute for Integrative Nutrition on Tuesday for an Instagram Live at 2:00 pm EST.  And then on Wednesday, I’ll be in the Real Simple kitchen cooking up a storm on Instagram Live at 1:00 pm EST.  So excited for everything!  Here’s so inspo for the week:

I like to plan ahead, even if things don’t always work out that way.  Sometimes half the fun is in the planning, such as a vacation or an upcoming weekend.  And sometimes the anticipation is better than the reality LOL!  I do a lot of food planning – classes, family meals for the week, and holidays, for example.  It’s truly one of my favorite things to do and I love thinking about how everyone will enjoy a particular meal or recipe.Continue reading

I have had the best week with my girls home for spring break, and I’ll be sad to see them go back to school on Sunday.  I have one more week of cooking classes before I head out to NY for a couple of days.  Spring is flying by!  Here’s your dinner planner for the week:Continue reading

St. Patrick’s Day Green Breakfast Cookies Recipe

I hope I’m squeezing in this recipe in time for your St. Patrick’s Day baking!  I know how much fun it is to surprise the kiddos with green treats on St. Patrick’s Day.  I have had amazing feedback from the “green” recipes I have posted in the past.  If you’re new here, you must check out these green muffins, this vegan mint chip smoothie, green pancakes, and this matcha chia pudding parfait. If you’re looking for something savory, I always make this vegan split pea and barley soup with whole wheat Irish soda bread.  My family loves it so much, I make it often in the colder months.Continue reading

The Best Grain-free Sandwich Bread Recipe

After I posted this bread on Instagram over the weekend, I had no idea that the reaction would be so enthusiastic for this recipe!  I’m excited to share it with you, but I didn’t have time to remake it and photograph the step-by-step instructions.  So just read through the instructions so you are familiar with the steps and you’ll be fine.  I originally developed this recipe for Clean Eating Magazine and the editors went crazy for this bread.  I’m not grain-free but I really like grain-free baked goods.  They’re higher in protein, lower in carbohydrates (usually) and they last longer in the fridge.Continue reading
