Does anyone else feel like we are living in a real life Twilight Zone? Or is it just me? Just when I thought things couldn’t get crazier, they do. We always have cooking! We can control what we cook, what we eat, when we eat it. I am looking for some tasty, comforting food this week. How about you? Here’s your dinner planner for the week:
Meatless Monday: Black bean and pumpkin soup
Tuesday: Miso glazed black cod, black rice, stir-fried baby bok choy from Kitchen Matters
Wednesday: Roasted cabbage wedges, sautéed vegetables with capers, almonds and dill p. 143 from Quicker than Quick, to add protein you can add cooked lentils to the sautéed veggies, or make basic crispy tofu or your favorite protein
Thursday: Greek sheet pan chicken with lemon and potatoes, served with cauliflower rice or garlicky broccoli
Friday: chipotle brussels sprouts, sweet potato and black bean tacos
Saturday brunch: Baked pumpkin oatmeal, served with fresh fruit and full fat greek yogurt or non-dairy yogurt
Sunday: Grilled chicken paillard, harvest chopped salad
Here’s what you can do ahead if you need to:
Sunday: Cook your beans if you like to make them from scratch.
Make miso mixture
Make salad dressing
Tuesday: prep all veggies for the rest of the week
Friday: prep pumpkin oatmeal
