In addition to my regular IG LIVE at 5 on Monday, I have an extra IG LIVE on Wednesday at 4:00 pm PT with Thrive Market!  I’ll be making my Chipotle Tofu Tacos from Quicker Than Quick and some fun toppings too.  Join me on my IG account! Here’s your dinner planner for the week:

Meatless Monday: porcini, greens and beans soup (my husband and I eat a bowl of soup for Monday dinner very often; my son will add some garlic bread or I might make some roasted potato slices on the side if he needs more.)

Tuesday: Whole roasted slow cooker chicken with carrots, sauteed greens of choice

Wednesday:  chipotle tofu tacos from QTQ, roasted Brussels sprouts

Thursday:  Italian fried rice; for plant-based protein, swap in half lentils or add frozen peas and parmesan cheese; for animal protein, add browned turkey sausage.

Friday: orange and rosemary glazed chicken, white bean puree from QTQ, favorite roasted vegetable or green salad with everyday salad dressing

Saturday brunch: Pizza quesadillas (sub Kite Hill almond milk ricotta for the mozzarella if dairy free)

Sunday: Deconstructed salmon sushi bowl (I use whatever vegetables I want to get rid of either raw or roasted/grilled.)

 

Here’s what you can do in advance if it helps you:

Sunday:

Wash greens

Make soup and reheat the next day

Make tofu spice mixture

Make salad dressing

Tuesday:

Press tofu and marinate

Make avocado lime crema

Wednesday:

Cook rice or lentils (if using) for fried rice

Thursday:

Marinate orange glazed chicken

Cook white beans if making from scratch
