So much Thanksgiving excitement happening here! Thanksgiving is on Thursday, November 23rd.  Here are some ways I am here for you! Meatless Monday: French Onion Soup, chopped salad with chickpeas and avocado

Tuesday: Baked chicken with artichokes and capersmillet-cauliflower mash

Wednesday: Tuna Patties, Winter Vegetable Slaw with Ginger and Lime from Kitchen Matters mixed with quinoa and any leftover avocado.

Thursday: Roasted salmon (olive oil, salt and pepper and/or your favorite seasoning blend at 400 degrees/8-10 minutes per inch of thickness) with roasted balsamic rutabagassautéed Swiss chard (you can use this recipe and leave out the dried apricots and pine nuts, if you want)

Friday: Pizza night!  Here’s my homemade pizza dough recipe.  I cook the pizzas on a preheated pizza stone in my oven at the highest temperature my oven will go which is 500 convection!

Saturday Brunch: pumpkin pancakes served with yogurt and sauteed apples

Sunday: “The Only Meatloaf that Matters” by Molly Baz , roasted potatoes and broccoli
