Happy weekend! If you take my monthly online cooking class, the June class is up and the theme is Summer Potluck! I demonstrated 5 fabulous brand new recipes that are perfect for summer gatherings, potlucks, July 4th get-togethers, and all the recipes (as usual) are flexible. I share ways to make everything vegan, gluten-free, vegetarian, and dairy-free. If you don’t take my monthly class, you’re missing out! If you give me an hour a month, I’ll make you a better and healthier cook! Here’s your dinner planner for the week:
Meatless Monday: Zucchini pizza boats (add cooked ground turkey or tempeh to the marinara if you want some more protein), vegetarian chopped antipasto salad
Tuesday: slow cooker barbacoa tacos + all the fixings! I always serve a vegetable with every meal, so I’ll probably saute some bell peppers and onions.
Wednesday: Chicken kabobs with green goddess tzatziki, steamed rice, pita, green salad
Thursday: Farro chopped salad with orange juice vinaigrette, pan-seared halibut
Friday: Melissa Clark’s Ratatouille Sheet Pan Chicken looks interesting via Today Food
Saturday brunch: Watermelon and tomato salad with feta and mint
Sunday: Corn cakes with avocado salsa, grilled shrimp (I do a quick spice rub on these with my fish taco seasoning), and green salad with radishes, red cabbage, white beans and cilantro dressing
Here’s what you can do in advance if it helps you:
Sunday:
Wash greens
Make antipasto dressing
Roast artichoke hearts for salad
Monday:
Blend the sauce for slow cooker tacos
Tuesday:
Marinade chicken for kabobs
Make green goddess tzatziki
Wednesday:
Cook farro
Make orange juice vinaigrette
Thursday:
Season chicken for ratatouille sheet pan
Saturday:
Make cilantro dressing
