Meatless Monday: Cauliflower Steaks Caprese, arugula salad with pine nuts, radishes and everyday salad dressing #1 (load up your salad with more, if you need it – quinoa, cooked farro, chickpeas, feta or vegan cheese and/or add to the cauliflower steaks)

Tuesday: Korean Beef Fajitas (p. 239) from Quicker than Quick, served with tortillas or lettuce leaves, cilantro-lime slaw 

Wednesday: Romesco pasta salad with basil and parmesan from Bon Appetit, roasted eggplant

Thursday: arugula and farro salad with peaches served with grilled shrimp OR pan-seared halibut 

Friday: Summer rolls with whatever you have in the fridge/pantry.  The rice wrappers are bland so that you can add whatever you want (anything you would mix together in a salad can go in a summer roll.)  Setting up a DIY bar for the family is a great way to accommodate different dietary preferences and it’s also a great way to use up leftovers.  Add black rice salad if you need more.

Saturday brunch: Cucumber-hummus turkey roll ups + fresh fruit

Sunday: tuna or wild salmon patties, Mediterranean quinoa salad and, if you’re feeling ambitious, carrot salad with avocado (so easy and there’s never a drop left)

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Make salad dressing

Wash greens and herbs

Make romesco sauce 

Wednesday: 

Cook farro

Thursday: 

Cook black rice 

Friday: 

Cook quinoa
