Cooking class subscribers, the new August class is being uploaded on August 1 and you are going to love it! Stay tuned!  You might notice I am adding lighter foods and quick-cooking recipes to the dinner planner during the heart of the summer.  That’s how I change my eating in accordance with the seasons.  We want to eat foods that are cooling (generally more high-water foods that are more hydrating.). Raw vegetables and lightly cooked vegetables are also more cooling.  Just something to think about if you’re trying to beat the heat! Here’s your dinner planner for the week:

Meatless Monday: Lighter and easier eggplant parmesan, green salad with chickpeas

Tuesday: Spiced Salmon Bowl with Thai Basil Yogurt from Gaby Dalkin

Wednesday: Stir-fried ginger beef with shiitake mushroomscilantro-lime rice (stir-fries are fast and don’t require heating up the kitchen too much!)

Thursday: Grilled halibut with watermelon pico de gallofarro with golden beets, cucumber, feta and mint vinaigrette

Friday: Solterito (Peruvian chopped salad), Grilled Shrimp from KM (honestly, there’s plenty of protein in the salad, but it’s delicious with shrimp!)

Saturday Brunch: Cucumber hummus turkey roll ups

Sunday: Grilled pizzagrilled romaine salads. Italian Semifreddo Recipe with Crushed Biscotti & Cherries for dessert!
